Tips:
- Choose the right catfish fillets: Look for catfish fillets that are firm and have a mild, sweet flavor. Avoid fillets that are thin or have a strong, fishy smell.
- Make sure your catfish fillets are dry before coating them: This will help the cornmeal crust adhere to the fish.
- Use a light hand when coating the catfish fillets: Too much cornmeal will make the crust heavy and greasy.
- Cook the catfish fillets over medium heat: This will help prevent the cornmeal crust from burning.
- Serve the catfish fillets immediately: Corn-crusted catfish is best enjoyed when it is hot and crispy.
Conclusion:
Corn-crusted catfish is a delicious and easy-to-make dish that is perfect for a weeknight meal. The cornmeal crust is crispy and flavorful, and the catfish is moist and flaky. This dish can be served with a variety of sides, such as coleslaw, french fries, or mashed potatoes.
