CHIPOTLE CORN CHOWDER

Chipotle Corn Chowder image

Chipotle chiles are dried smoked jalapenos that are dark brown in colour, they have a sweet smokey flavor and have lots of heat, use chipotles packed in adobo sauce, adobo sauce is a dark red sauce from ground chiles, with herbs and vinegar added. Chipotles are great to add into any recipe to "kick" it up... for this recipe it really adds so much flavor to the soup! Serving size is only estimated my DS can eat this by himself lol!... This soup is worth making, it is delicious!

Tips:

  • Use fresh or frozen corn: Fresh corn is best, but frozen corn is a good option if fresh corn is not available. Thaw frozen corn before using.
  • Use a variety of peppers: This recipe calls for poblano and chipotle peppers. Poblano peppers are mild, while chipotle peppers are smoky and spicy. You can adjust the amount of each pepper to suit your taste.
  • Don't overcrowd the pan: When cooking the corn and peppers, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Use a good quality stock: The stock you use will make a big difference in the flavor of the chowder. Use a homemade stock if you can, or use a good quality store-bought stock.
  • Don't overcook the seafood: The seafood in this chowder cooks quickly, so don't overcook it. Overcooked seafood is tough and chewy.
  • Serve with your favorite toppings: This chowder is delicious served with a variety of toppings, such as sour cream, crumbled bacon, or chopped fresh cilantro.

Conclusion:

This corn, crab, and chipotle chowder is a delicious and easy-to-make meal that is perfect for a weeknight dinner. It is also a great way to use up leftover corn and crab. The chowder is flavorful and creamy, with a slight kick from the chipotle peppers. It is sure to be a hit with your family and friends.
