1 box corn muffin mix
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 oz. can chopped green chiles
1 1/2 cups shredded cheddar cheese, divided

Steps:

  • Preheat oven to 400°F and grease an 8 inch square pan.
  • Stir together everything but 1/2 cup of cheese.
  • Spread batter in prepared pan. Bake for 35 minutes.
  • Sprinkle with remaining cheese. Bake an additional 10-15 minutes. The edges should be golden and the center mostly set.

2 beaten eggs
1 (15 ounce) can cream-style corn
1 (8 ounce) container sour cream
1/4 c melted butter
1 (15.25 ounce) can whole kernel corn, drained
1 1/2 c shredded cheddar cheese
3/4 c chopped onion
1 (4 ounce) can diced green chilies, drained
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
dash red pepper flakes, optional
1 (8.5 ounce) package dry corn muffin mix

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 2 quart casserole dish. In a large mixing bowl, combine eggs, cream style corn, sour cream and melted butter. Stir in whole kernel corn, cheese, onion, chilies, and seasonings. Stir in the corn muffin mix until just moistened. Bake in a preheated 350 degrees oven for 60-75 minutes; or until an inserted knife comes out clean and the top is golden. Let stand 5 minutes before serving.

4 ounces reduced-fat cream cheese (you can use regular cream cheese if you prefer)

1 (6 ounce) can French fried onion rings

Steps:

  • Preheat over to 350°F.
  • In a saucepan, combine both cans of corn, green chilies, cream cheese and cheddar cheese and cook over medium high heat until cheeses are melted. Stir frequently.
