2 can(s) campbells tomato soup- family size
4 c water
2 can(s) creamed corn
2 can(s) corn kernel
2 c spinach, chopped- fresh or frozen
2 c tomato, diced- fresh or canned
3 tsp chipotle chili powder (more or less to your taste)
1 can(s) tomato paste
salt and pepper to taste

Steps:

  • 1. Mix all ingredients into a large, deep pot. Stir well. Heat on medium heat, stirring often, for about 15 min. Reduce heat to low and simmer another 15 min. Stir well and serve!

Tips:

  • Utilize Fresh Ingredients: Use fresh corn and tomatoes for optimal flavor and texture. If fresh produce isn't accessible, frozen or canned options can be used.
  • Enhance Flavor with Herbs and Spices: Experiment with various herbs and spices to create a flavor profile that suits your preference. Some popular choices include basil, oregano, thyme, garlic, and paprika.
  • Don't Overcook the Vegetables: To maintain the vibrant colors and textures of the corn and tomatoes, avoid overcooking them. Cook until they are tender but still hold their shape.
  • Add a Touch of Creaminess: For a richer and creamier stew, stir in some heavy cream or sour cream just before serving. Alternatively, you can use coconut milk for a vegan option.
  • Serve with Accompaniments: Elevate your corn and tomato stew by serving it with crusty bread, steamed rice, or quinoa. You can also add a dollop of yogurt or guacamole for extra flavor and texture.
