Black-Eyed Peas, Corn and Squash Salad image

Provided by Food Network

Categories     main-dish

Number Of Ingredients 15

1 1/2 cups dried black-eyed peas
1 onion, peeled, cut in half and stuck with two cloves
1 bay leaf
2 teaspoons salt plus 2 tablespoons salt
1 teaspoon freshly ground pepper
10 ears fresh corn, shucked
2 tablespoons salt
3 thin zucchini, diced
4 crookneck yellow squash, diced
8 Italian Roma tomatoes, cored and diced
1 bunch scallions, washed and sliced thinly at an angle
1/4 cup sherry vinegar
1/2 cup plain yogurt
1/2 cup extra virgin olive oil
1 bunch flat leaf parsley, washed, leaves chopped coarsely

Steps:

  • Rinse and drain black-eyed peas. Place in medium heavy saucepan and add onion halves (with cloves), bay leaf and enough water to cover by an inch. Bring to the boil, reduce to barely a simmer, cover and cook 20 minutes. Add 1 teaspoon salt and 1/2 teaspoon ground pepper, and a little more water if none is visible when you tilt the pan, and cook, covered, another 20-30 minutes until beans are creamy inside but still intact. Drain and remove onions and bay leaf. Let cool.
  • Meanwhile, bring large pot of water to the boil. Add 2 tablespoons salt and 5 corn cobs. Cook corn 23 minutes. Remove corn and repeat with remaining cobs. Let cobs cool, then carefully cut corn from cob with sharp knife. Place cut corn in a medium bowl and add diced zucchini and squash, tomatoes, and scallions. Place vinegar in a small bowl and whisk in yogurt along with 1 teaspoon salt and 1/2 teaspoon pepper. Drizzle in olive oil while whisking so as to form an emulsion. Pour dressing over corn and vegetables. Add cooled black-eyed peas and chopped parsley. Stir gently to combine and serve.

SPICY CORN AND SHISHITO SALAD

Spicy Corn and Shishito Salad image

In this recipe, shishito peppers are sliced, lightly sautéed, then tossed with raw summer corn and a cumin-lime vinaigrette for a summer salad that's crunchy, smoky and a little spicy. Traditionally used in Japanese and Korean cooking, shishitos are small, thin-skinned green peppers that have become increasingly popular in the United States. They are typically mild in flavor, but the occasional pepper packs a spicy punch. If you can't find them, use diced green bell peppers in their place. Finally, cilantro-averse cooks can substitute fresh mint.

Time 15m

Yield 4 servings

Number Of Ingredients 11

3 1/2 tablespoons olive oil
2 tablespoons fresh lime juice
1/4 teaspoon ground cumin
Kosher salt
1/3 cup diced red onion
1 garlic clove, minced
3 cups fresh corn kernels (from 4 to 6 ears of corn)
6 ounces shishito peppers, stemmed and cut crosswise into 1/4-inch slices, or green bell peppers, stemmed and diced
1 large jalapeño, seeds and ribs removed, diced
1/4 cup grated Cotija or crumbled feta cheese (optional), or to taste
1/4 cup chopped fresh cilantro leaves and tender stems, plus more to taste

Steps:

  • In a small bowl, whisk 2 tablespoons olive oil with the lime juice, cumin and 3/4 teaspoon salt. Stir in the red onion and garlic and set aside until ready to use. (Do this step first so the onions and garlic have time to mellow slightly in the dressing.)
  • Place the corn kernels in a large bowl and set aside. In a medium (10-inch) sauté pan, heat the remaining 1 1/2 tablespoons olive oil over medium heat. Add the shishitos, jalapeño and a pinch of salt and cook, stirring occasionally, until the peppers are tender and beginning to brown, 4 to 6 minutes.
  • Add the peppers and dressing to the bowl with the corn and toss well. Add the cheese, if using, and toss. Garnish with cilantro.

GRILLED CORN SALAD WITH CHAYOTE SQUASH

Grilled Corn Salad with Chayote Squash image

My roasted corn salad with chayote squash. Refrigerate overnight, if possible. The longer that the mixture is allowed to sit, the more flavorful it will become.

Provided by Christopher Stolworthy

Time 9h35m

Yield 6

Number Of Ingredients 9

1 tablespoon extra-virgin olive oil, or more to taste
8 ears corn, shucked
2 chayote squash, peeled and quartered
2 medium zucchini, quartered lengthwise
2 Anaheim chile peppers
1 medium red onion, minced
1 bunch fresh cilantro, minced
1 medium lime, zested and juiced
1 pinch salt to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Oil corn, chayote squash, zucchini, and chile peppers; place on a rack for 5 minutes to allow excess oil to drip off.
  • Transfer vegetables to the preheated grill and cook until they have a nice brown crust, 10 to 15 minutes. The corn should have some kernels that are close to burning, and the peppers will be expanding and making popping noises. Remove from the grill and allow to cool, about 30 minutes.
  • Remove and discard the plastic-like skin from the peppers by scraping the blade of a knife along the outsides. Mince peppers, dice zucchini and chayote, and cut corn kernels off the cobs. Transfer all to a bowl and add onion, cilantro, lime zest and juice, and salt to taste. Add more olive oil if the mixture is dry or if you want the flavor to be more pronounced.

Tips:

  • Choose the right corn and squash: For the best flavor, use sweet corn that is fresh and in season. Choose a variety of squash that is firm and has a deep color.
  • Cook the corn and squash properly: To ensure that the corn and squash are tender and flavorful, cook them properly. Corn can be boiled, grilled, or roasted. Squash can be roasted, sautéed, or grilled.
  • Use fresh herbs and spices: Fresh herbs and spices can add a lot of flavor to corn and squash salad. Some good options include cilantro, basil, oregano, thyme, and cumin.
  • Don't overdress the salad: A light dressing is all that is needed to enhance the flavors of the corn and squash. A simple vinaigrette or a dressing made with olive oil, lemon juice, and honey are both good options.
  • Serve the salad immediately: Corn and squash salad is best served immediately after it is made. The corn and squash will lose their flavor if they sit for too long.

Conclusion:

Corn and squash salad is a delicious and healthy side dish that can be enjoyed all summer long. With its vibrant colors and fresh flavors, this salad is sure to be a hit at your next potluck or barbecue. So next time you're looking for a quick and easy side dish, give this corn and squash salad a try. You won't be disappointed!
