Time 1h15m

Number Of Ingredients 10

1 can(s) whole kernel corn and juice
1 can(s) cream style corn
1 can(s) small can, chopped green chilis (opt.)
1 small onion, chopped
1/2 c chopped red or green bell pepper
1 stick butter or margarine
8 oz processed cheese, cubed
1/4 c evaporated milk
1 c elbow macaroni, dry
salt and pepper to taste

Steps:

  • 1. Mix together corn, onion, pepper, chilis (opt.) and dry macaroni. Slice butter into the mixture along with the cheese. Add milk. Add seasoning to your liking. Pour into a greased casserole dish with a lid.
  • 2. Cover and bake at 350 degrees for 30 minutes. Remove lid and stir. Add more milk if mixture seems dry.
  • 3. Continue baking, uncovered, for another 30 minutes until top is a little browned and macaroni is tender. If mixture seems too dry, add more milk. Some corn has more liquid than others. Let set a few minutes, covered, and serve.

Tips:

  • Choose the right pasta. Macaroni is the most common pasta used in corn and macaroni casserole, but you can also use other small pasta shapes like penne, shells, or rotini.
  • Use fresh corn. Fresh corn on the cob is the best choice for this casserole, but you can also use frozen or canned corn in a pinch.
  • Don't overcook the pasta. The pasta should be cooked al dente, or slightly firm to the bite. This will prevent it from becoming mushy in the casserole.
  • Use a good quality cheese. The cheese is one of the most important ingredients in corn and macaroni casserole, so don't skimp on quality. Use a sharp cheddar cheese for a bold flavor, or a mild cheddar cheese for a more subtle flavor.
  • Add some vegetables. Vegetables like diced bell peppers, onions, or zucchini can add color and flavor to your casserole.
  • Season to taste. Corn and macaroni casserole is a versatile dish that can be seasoned to your liking. Add salt, pepper, garlic powder, or other spices to taste.
