COLOMBIAN CORN AND CHEESE AREPAS

Colombian Corn and Cheese Arepas image

Provided by Julia Moskin

Categories     appetizer, side dish

Time 1h

Yield 11 large arepas

Number Of Ingredients 6

3 cups (about 1 pound) precooked white corn flour, like harina P.A.N.
2 tablespoons sugar
5 tablespoons unsalted butter, melted
1 1/2 pounds soft fresh cheese like queso blanco or queso fresco (or mozzarella) coarsely grated (about 4 cups, well packed)
8 ounces aged cow's-milk cheese, preferably Mexican cotija (or Manchego or Parmesan), coarsely grated (about 2 cups)
1 1/2 teaspoons salt

Steps:

  • Combine the flour and sugar in a large bowl. Gradually add 3 cups warm water, mixing with your fingers, then work in 4 tablespoons of the butter. Knead to a soft dough.
  • One cup at a time, knead in the cheese. Add 1 to 2 tablespoons more water if the mixture seems dry. Taste the dough (some cheeses are very salty), then knead in salt to taste, 1/2 teaspoon at a time. Continue kneading until the dough feels soft and smooth, with no lumps. Set aside to rest for at least 15 minutes, covered with a damp cloth.
  • Heat the broiler or a grill over high heat. Divide dough into 11 portions, roughly 5 ounces or 1/2 cup each. Roll into balls between your palms and set aside on a tray covered with a damp kitchen towel. Flatten each ball into a thick circle, 3 1/2 inches in diameter, flat on both sides. Return to tray and keep covered.
  • Line broiler or grill rack with aluminum foil and brush foil lightly with remaining 1 tablespoon butter. Arrange arepas on foil and cook about 4 inches from the heat source, turning once, until both sides are golden brown and speckled - about 10 minutes per side. Serve immediately, for breakfast (like corn muffins) or as an accompaniment to soups or stews (like corn bread).

CORN CON QUESO

Corn Con Queso image

I'm not a fan of Emeril's, but I have to say he sometimes has good recipes! This was from his show and it's a fabulous dip for veggies or sturdy crackers or whatever. I make it frequently, it's a great dish to bring if you don't want to bring something that someone else might be bringing, adding more or less heat for individual tastes.

Provided by Food Network

Yield 4 servings

Number Of Ingredients 8

1 cup white wine
1/2 pound mozzarella cheese, grated
1/2 pound goat's milk cheddar or Monterey Jack or Mexican Cotija, grated
1/2 pound goat cheese crumbled
2 chipoltle chilies in adobo sauce, finely chopped
1/4 pound dried, cured chorizo, finely diced
6 cloves roasted garlic, smashed to a paste
Salt and freshly ground black pepper

Steps:

  • Bring the wine to a simmer in a double boiler. Add the mozzarella and goat's milk cheddar, then stir until melted. Add the remaining ingredients and cook for 5 minutes. Place in a fondue pot and serve with jicama slices and tri-color corn chips.

Tips:

  • Fresh corn is best: Use fresh corn on the cob for the best flavor and texture. If you don't have fresh corn, you can use frozen corn, but be sure to thaw it completely before using.
  • Use a variety of cheeses: Feel free to experiment with different types of cheeses to create your own unique queso. Some good options include cheddar, Monterey Jack, queso Oaxaca, and pepper Jack.
  • Don't overcook the corn: The corn should be cooked until it is tender, but still has a slight crunch. Overcooked corn will be mushy and bland.
  • Serve with your favorite toppings: Queso is a great appetizer or snack, and it can be served with a variety of toppings, such as salsa, guacamole, sour cream, and cilantro.

Corn and goat cheese queso is a delicious and easy-to-make appetizer or snack. It's perfect for parties or potlucks, and it can also be enjoyed as a simple meal. With its creamy texture and cheesy flavor, corn and goat cheese queso is sure to be a hit with everyone who tries it.
