- Preheat oven to 400 degrees.
- Cook pasta according to package directions to "Al Dente" doneness. Drain and place in a large bowl.
- Pour alfredo sauce and dijon mustard over the cooked pasta and stir. Add in 3/4 of the sharp cheddar and all of the Jarlsberg and parmesan cheese. Stir until well combined.
- Spray an 8"x 8" baking pan with non-stick cooking spray and spoon pasta into the dish.
- Sprinkle remaining sharp cheddar over the pasta. Bake for about 20 minutes, or until the cheese is melted and the sauce is bubbly.

COPYCAT COSTCO(R) DELI MAC AND CHEESE
Costco's mac and cheese that they sell in their deli section is so yummy, but they only sell it at a certain time of the year. I wanted to try to figure the recipe out so that when they don't have it, I can still make it myself. This recipe is what I came up with. It is very decadent and NOT low-cal. LOL

Steps:
- Cook cavatappi pasta according to package directions so it is al dente, drain, add 1 Tbsp of butter while still hot, and mix through; set aside to cool mostly.
- In a large sauce pan, melt butter into cream over low heat. Add garlic salt and pepper to taste.
- Stir in the pecorino romano and parmesan cheese over medium heat until melted; this will thicken the sauce. Remove from heat and allow to cool mostly.
- Once both noodles and sauce are just slightly warm, stir the sauce into the noodles. Add 3 cups of cheddar cheese and mix.
- Smooth into a 13x9x2 baking dish. Sprinkle top with the remaining cup of cheddar cheese. Bake at 350 degrees F for 30 minutes or until top starts to brown slightly.
COSTCO MAC AND CHEESE
Steps:
- Bring a pot of water to a boil - add cavatapi and cook according to directions on package. Drain water and set aside.
- Add butter to a large skillet and melt over low heat. Add heavy cream and milk and stir until combined.
- Slowly mix in cheeses over medium-low heat until it thickens. If it doesn't thicken, you can add in a mixture of 1 teaspoon cornstarch and 2 teaspoons cold water.
- Add seasonings to taste.
- Combine the pasta with the sauce and pour into a large baking dish.
- Top with shredded cheddar cheese
- Bake at 400 for 25-30 minutes or until heated through. Broil to caramelize cheese.

- Preheat oven to 350°; butter an 8x8 inch baking dish.
- Bring a large pot of salted water to a boil over high heat; cook farfalle until al dente, about 8-10 minutes; drain.
- In a large pan over med-low heat, melt the butter; sprinkle in the flour and stir with a wooden spoon until the flour is incorporated, about 1 minute.
