I've had this recipe since 1938, when the girls I worked with game me a bridal shower. One of their presents was a recipe box filled with their favorites. Inside, I found this recipe, and I've used it for just about every occasion since. They're always well received.

2 cups sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 cups chopped dates
2 cups chopped walnuts or pecans
4 large eggs, lightly beaten, room temperature
2 tablespoons butter, melted
1 teaspoon vanilla extract
Confectioners' sugar

Steps:

  • In a large bowl, combine the sugar, flour, baking powder, salt, dates and nuts. Add the eggs, butter and vanilla; stir just until dry ingredients are moistened (batter will be very stiff). , Spread in a greased 15x10x1-in. baking pan. BARS:
1 cup brown sugar
1 cup butter, softened
1 3/4 all-purpose flour
1 1/2 cups quick cooking oats, uncooked
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In 2 quart saucepan, cook filling ingredients over low heat for about ten minutes, stirring constantly until thickened. Cool five minutes. Heat oven to 400°F. Grease a 9x13-inch pan with shortening. In a large bowl, stir brown sugar, and butter until well mixed. Stir in oats, baking soda, and salt until crumbly. Press half the mixture evenly in the bottom of the pan. Spread evenly with cooled filling. Top with remaining crumb mixture, press lightly. Bake 25 to 30 minutes until light brown. Cool 5 minutes on cooling rack, then cut into rows while still warm.

3/4 cup chopped pitted dates
3/4 cup chopped dried apricots
1/2 cup dried cherries
1/3 cup apricot jam
1 pouch Betty Crocker™ snickerdoodle cookie mix
1/2 cup cold butter, cut into pieces
3/4 cup chopped pecans

Steps:

  • In 2-quart saucepan, mix orange juice, dates, apricots and cherries. Heat to boiling over medium heat. Remove from heat; cover and let stand 30 minutes. Drain. In small bowl, mix dried fruit and apricot jam.
  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In large bowl, place cookie mix and cinnamon-sugar packet. Cut in butter, using pastry blender (or pulling 2 table knives through mix in opposite directions), until mixture looks like coarse crumbs. Reserve 1 1/2 cups of the crumb mixture. Press remaining mixture in bottom of pan. Bake 10 minutes or until light golden brown. Cool.
  • Top partially baked crust with fruit mixture. Mix reserved 1 1/2 cups crumb mixture and the pecans. Sprinkle over fruit mixture.
  • Bake 25 to 30 minutes or until light golden brown. Cool completely in pan on cooling rack, about 1 hour. Cut into 6 rows by 4 rows.

1-1/2 cups water
1/3 cup coarsely chopped walnuts, optional
1-1/4 cups all-purpose flour

1-1/2 cups quick-cooking oats
1 cup packed brown sugar
1/2 cup butter, softened
1 tablespoon water

Steps:

  • In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. INGREDIENTS FOR CRUMB CRUST
1 c brown sugar, firmly packed
1 c margarine or butter, softened or slightly melted
1 3/4 c all purpose flour, or wheat flour
1/2 tsp salt
1/2 tsp baking soda
1 1/2 c cup quick cooking oats
INGREDIENTS FOR DATE FILLING
3 c dates, chopped
1/4 c sugar
1 1/2 c water

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Prepare Date Filling: Cook dates, 1/4 cup sugar and water over low heat about 10 minutes; stirring constantly, until thickened; set aside to cool
  • 3. Grease 13 x 9 x 2-inch baking pan. Mix brown sugar and margarine; mix in remaining ingredients until crumbly. Press ½ of the crumb mixture evenly in bottom of pan. Spread with Date Filling. Top with remaining crumb mixture; press lightly.
  • 4. Bake 25 to 35 minutes or until light brown; cool slightly. Cut into 2 x 1½-inch bars.

1 grated orange, zest of
1/4 cup orange juice

1 cup Quaker Oats (I never worry about whether they're quick cooking or not! I just dump 'em in!)
1 cup brown sugar
1/2 cup butter, melted

Steps:

  • For filling, combine all filling ingredients except for nuts in medium sized saucepan.
  • Cook over low heat, stirring occasionally til thickened.
  • Cool.
  • Stir in nuts.
  • For base, sift together flour, soda and salt.
