Time 1h

Number Of Ingredients 5

clean picnic cooler (ice chest)
cleaned and shucked corn on the cob (i did @ 2 dozen ears of corn)
large pot of boiling water (i use a large stock pot), enough to cover the corn
1/3 c granulated sugar (per large pot of water) (probably could use splenda)
1/3 c salt (per large pot of water)

Steps:

  • 1. In a large pot, add water, salt and sugar..... bring to a boil.
  • 2. Be sure the inside of the cooler is clean; add the shucked ears.
  • 3. Carefully pour boiling water over the corn and close the cooler lid. (DO NOT OPEN FOR AT LEAST 30 TO 40 MINUTES)
  • 4. In 30-40 minutes, your corn will be perfectly cooked and will remain warm for a couple of hours.
  • 5. The corn is perfect and really doesn't need anything, but you can butter it as you normally would. It is really sweet enough and salty enough without adding more.

Tips for the Best Cooler Corn

  • Use Fresh Corn: Fresh corn is essential for the best flavor. Look for ears with bright green husks and plump kernels.
  • Prepare the Corn Properly: Remove the husks and silks from the corn. Then, rinse the ears under cold water.
  • Use a Large Cooler: Make sure to use a cooler that is large enough to hold all of the corn. You want the corn to be submerged in the water.
  • Use Boiling Water: Bring a large pot of water to a boil. Pour the boiling water over the corn in the cooler.
  • Let the Corn Soak: Let the corn soak in the boiling water for at least 30 minutes. This will cook the corn through.
  • Drain the Corn: After 30 minutes, drain the corn in a colander. Rinse the corn with cold water to stop the cooking process.
  • Serve Immediately: Serve the corn immediately with butter, salt, and pepper. You can also add other toppings, such as sour cream, chili powder, or crumbled bacon.

Conclusion

Cooler corn is a delicious and easy summer side dish. It is perfect for picnics, potlucks, and backyard barbecues. With just a few simple ingredients and a little bit of time, you can make the best cooler corn that everyone will love. So next time you're looking for a quick and easy way to cook corn, give cooler corn a try. You won't be disappointed!
