½ cup white sugar
2 cups all-purpose flour
4 eggs
1 ½ cups white sugar
¼ cup all-purpose flour
2 lemons, juiced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
  • Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  • Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.

Tips:

  • Use a good quality cookie mix. This will ensure that your lemon bars have a delicious flavor and texture.
  • Be sure to chill the cookie mix before baking. This will help to prevent the bars from spreading too much in the oven.
  • Don't overbake the bars. They should be set, but still slightly gooey in the center.
  • Let the bars cool completely before cutting them. This will help to prevent them from falling apart.
  • For a tart and tangy flavor, use fresh lemon juice. If you don't have fresh lemon juice, you can use bottled lemon juice, but be sure to use 1/2 cup plus 2 tablespoons.
  • If you want a sweeter flavor, you can add 1/2 cup of sugar to the filling.
  • For a richer flavor, you can use butter instead of vegetable oil in the crust.
  • You can also add 1/2 cup of chopped nuts to the crust for a crunchy texture.

Conclusion:

Lemon bars are a delicious and easy-to-make dessert that is perfect for any occasion. With a few simple ingredients, you can create a sweet and tangy treat that everyone will love. So next time you're looking for a quick and easy dessert, give these lemon bars a try.
