Time 1h5m

Yield 20 servings

Number Of Ingredients 7

Nonstick cooking spray
2 cups hazelnuts
1 cup (2 sticks) unsalted butter
1 cup sugar
1/8 teaspoon kosher salt
1 cup dark chocolate chips
Coarse sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with a nonstick silicone liner and coat it with cooking spray. Set aside.
  • On another baking sheet, roast the hazelnuts until fragrant, 10 minutes. Remove them to a plate.
  • Combine the butter, sugar and salt in a medium saucepan and bring to a boil, whisking until melted. Cook, whisking occasionally, until the mixture registers 300 degrees F on a candy thermometer. Immediately remove from the heat and stir in the hazelnuts. Pour the mixture onto the prepared baking sheet and smooth with an offset spatula. Let dry for about 1 1/2 minutes, then scatter the chocolate chips on top. As they melt, spread the chocolate to the outer edges of the toffee with an offset spatula. Sprinkle with sea salt and freeze until set, about 30 minutes. Peel the toffee away from the silicone liner and transfer to a cutting board. Cut into pieces with a sharp knife. The toffee will keep, tightly covered, up to 1 week.

Time 1h20m

Yield 32

Number Of Ingredients 5

2 cups butter
2 cups white sugar
¼ teaspoon salt
2 cups semisweet chocolate chips
1 cup finely chopped almonds

Steps:

  • In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
  • While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
  • As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
  • Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.

Tips:

  • Use fresh hazelnuts. Fresh hazelnuts will have a more pronounced flavor and a better texture than older nuts.
  • Toast the hazelnuts before using them. Toasting the hazelnuts will enhance their flavor and make them more fragrant.
  • Use a heavy-bottomed saucepan for making the toffee. This will help to prevent the toffee from burning.
  • Be patient when making the toffee. It takes time for the toffee to reach the right consistency. Do not rush the process, or you will end up with a grainy toffee.
  • Use a candy thermometer to measure the temperature of the toffee. This will help you to ensure that the toffee reaches the right temperature.
  • Be careful when working with hot toffee. Toffee is very hot and can cause serious burns. Always wear gloves when handling hot toffee.
  • Store the toffee in an airtight container. Toffee can be stored at room temperature for up to two weeks.

Conclusion:

Hazelnut toffee is a delicious and easy-to-make candy that is perfect for any occasion. With just a few simple ingredients, you can create a sweet and crunchy treat that everyone will love. So next time you are looking for a special treat, give hazelnut toffee a try. You won't be disappointed!
