¼ cup butter (melted)
1 cup sour cream
1 cup cream of chicken soup (or cream of cheddar)
¼ cup green onion (chopped)
2 cup cheddar cheese (divided)

Steps:

  • Preheat oven to 375˚F and grease a 9x13 inch baking dish.
  • If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
  • Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
  • Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
  • Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

1 stick salted butter, plus more for the pan
1 yellow onion, chopped
2 cloves garlic, chopped
16 oz. sour cream
2 10.5-oz cans condensed cream of chicken soup
1 30-oz bag frozen shredded hash brown potatoes, thawed
8 oz. shredded cheddar
1 c. breadcrumbs
1 tbsp. chopped parsley

Steps:

  • Preheat the oven to 375˚. Heat a medium skillet over medium heat. Add 2 tablespoons of butter, then add the onion. Cook for 5 minutes, then add the garlic. Cook until the onion are slightly softened, about 2 minutes more. Transfer to a plate and let cool slightly.
  • In a large mixing bowl, combine the sour cream, cream of chicken soup, cheddar, hash brown potatoes and the onion mixture. Transfer to a greased three-quart casserole dish. Cover the casserole and bake for 45 minutes.
  • Meanwhile, place the remaining 6 tablespoons of butter in a small bowl. Cover and microwave for 45 to 60 seconds until melted. Mix in the breadcrumbs and parsley.
  • Top the casserole with the breadcrumb mixture and return to the oven, uncovered, for another 25 to 30 minutes, until the top is golden brown and the casserole is bubbly all over.

1 pound frozen hash brown potatoes
2 (10.75 ounce) cans condensed cream of mushroom soup
1 small onion, chopped
1 pint sour cream
2 ½ cups shredded Cheddar cheese
salt and pepper to taste
4 ½ cups crispy rice cereal squares
⅔ cup butter

Steps:

  • Place hash browns in the bottom of a 9x13 inch baking dish. In a medium bowl, stir together soup, onion, sour cream, cheese, salt and pepper until well combined. Pour over hash browns. Crush the cereal and mix with the butter. Sprinkle mixture over soup layer. Cover and let rest in refrigerator 24 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Bake in preheated oven 45 minutes, until golden, hot and bubbly.

7 medium potatoes, peeled and chunked
8 slices bacon
1 cup sour cream
1/2 cup chopped onion
3 tablespoons butter
1 cup shredded cheddar cheese
salt and pepper

Steps:

  • Boil potatoes until cooked.
  • While potatoes are boiling, fry bacon.
  • Chop fried bacon.
  • Drain potatoes and place in a large mixing bowl.
  • Add all other ingredients.
  • Whip with electric mixer (don't whip until completely smooth - leave some chunks in it; if you whip it too much it will be soupy).
  • Put whipped potato mixture into a 1 1/2 quart baking dish.
  • Cover and bake at 350 degrees for 35-40 minutes.

2-1/4 pounds sweet potatoes (about 3 large), peeled and cubed
3 egg whites, lightly beaten
3 tablespoons maple syrup
1 teaspoon vanilla extract
TOPPING:
1/4 cup chopped pecans
1 tablespoon brown sugar
1 tablespoon butter, melted
1/8 teaspoon ground cinnamon
1/3 cup dried apricots, chopped
1/3 cup dried cherries, chopped

Steps:

  • Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Drain and place in a large bowl; mash. Cool slightly. Stir in the egg whites, syrup and vanilla., Transfer to an 8-in. square baking dish coated with cooking spray.
