Looking for a different treatment for cabbage? Try this spicy cheese-topped dish that I adapted from a friend's recipe. I added a little of this and that until it tasted the way I wanted. CAJUN CABBAGE

We love this dish at our house, and whenever I take it to a potluck, it disappears just as quickly as it does at home. This pleasing recipe was given to me by my sister-in-law from Louisiana. I've made some changes in the ingredients, but the snappy Cajun flavor is still there. It's easy to increase for any number of guests.

Tips:

  • Choose the right cabbage: Select a firm, heavy head of cabbage with tightly packed leaves. Look for cabbages that are free of blemishes and bruises.
  • Shred the cabbage thinly: This will allow the cabbage to cook evenly and absorb the flavors of the other ingredients.
  • Use a large skillet or Dutch oven: This will give the cabbage plenty of room to cook and prevent it from overcrowding.
  • Cook the cabbage over medium-high heat: This will help to caramelize the cabbage and give it a slightly crispy texture.
  • Add seasonings and spices to taste: Cajun seasoning, garlic, onions, and bell peppers are all classic additions to cabbage dishes.
  • Cook the cabbage until it is tender but still has a slight crunch: Overcooking will make the cabbage mushy.
  • Serve the cabbage immediately: Cabbage is best served hot with your favorite side dishes.
