COWBOY QUICHE

Provided by Ree Drummond : Food Network

Time 1h50m

Yield 10 servings

Number Of Ingredients 13

1 unbaked Pam's Pie Crust, recipe follows
All-purpose flour, for rolling
8 slices bacon, fried until chewy
2 yellow onions, sliced
2 tablespoons salted butter
8 large eggs
1 1/2 cups heavy cream
Kosher salt and freshly ground black pepper, to taste
2 cups grated sharp Cheddar
2 1/2 cups all-purpose or pastry flour
1 teaspoon kosher salt
1 tablespoon sugar
1 cup (2 sticks) cold salted butter, cut into chunks

Steps:

  • Preheat the oven to 400 degrees F.
  • Roll out the pie dough on a floured surface. Gently lay it in a deep-dish pie pan and press it into the grooves of the pan. Cut off the excess. Set aside.
  • Chop up the bacon into bite-sized pieces.
  • Fry the onions in the butter in a heavy skillet over medium-low heat until deep golden brown, 12 to 15 minutes.
  • Meanwhile, mix the eggs, cream and some salt and pepper together in a large bowl. Add the bacon, onions and cheese and stir to combine.
  • Pour the mixture into the pie shell. Cover lightly with aluminium foil, place on a sheet pan and bake for 45 minutes.
  • Remove foil and bake until the quiche is set and the crust is golden brown, about 10 minutes more.
  • Allow to sit for 10 minutes. Fit for a king or a cowboy.
  • Lightly mix 2 cups of the flour with the salt and sugar in a mixing bowl or a food processor. Cut the butter into the flour using a pastry cutter or by pulsing the food processor. (The mixture should look like large crumbs and begin to cling together in clumps.)
  • Add the remaining 1/2 cup flour and mix lightly or pulse two or three times so as not to overmix the flour. Tip into a bowl. Sprinkle 1/4 cup cold water over the dough and mix with your hands or a wooden spoon until the dough holds together. Shape the dough into two discs.
  • Wrap the dough in plastic wrap and store in the fridge until ready to use. It can also be frozen for up to 6 months.

CONQUISTADOR QUICHE

Conquistador Quiche image

Spicy Mexican quiche. This is the recipe that I first came to Recipezaar to find. I requested the recipe, but no one could help me, so I made it up from memory in order to take it to a dinner party my friend was having. Sometime later, after my cookbooks were out of storage, I was able to locate the original recipe. This is pretty darn close.

Time 1h15m

Yield 1 quiche, 6-8 serving(s)

Number Of Ingredients 13

4 large eggs
3/4 cup milk (I like cream, makes it richer) or 3/4 cup cream (I like cream, makes it richer)
1 lb Italian sausage or 1 lb chorizo sausage
1 (4 ounce) can green chilies, chopped
1/2 cup chopped onion
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon pepper
1/2 cup shredded cheddar cheese
deep dish pie shell
sour cream
shredded lettuce
tomatoes, cut into wedges

Steps:

  • Poke holes in the crust with a fork and pre-bake 10 minutes.
  • Fry the sausage with the onion and spices until the onion is tender.
  • Layer meat, green chilies and cheese into crust.
  • Mix eggs and milk/cream together in a bowl with a bit of salt.
  • Pour over meat mixture in the crust.
  • Bake at 350 degrees for about 45 minutes or until a knife in the middle comes out clean. (Cover the crust edges with foil if it is browning too dark).
  • Cut into wedges and top with lettuce, sour cream and a tomato wedge.
  • Serve with salsa if desired.

Tips:

  • For the perfect quiche crust, use a combination of butter and shortening. This will result in a flaky and flavorful crust.
  • Blind bake the quiche crust before filling it. This will prevent the crust from becoming soggy.
  • Use high-quality ingredients for the filling. Fresh vegetables, flavorful cheeses, and tender meats will make a big difference in the taste of the quiche.
  • Season the filling generously. Quiche is a savory dish, so don't be afraid to add plenty of salt and pepper.
  • Bake the quiche until the center is just set. Overbaking will make the quiche dry and rubbery.
  • Let the quiche cool for a few minutes before slicing and serving. This will help the quiche to hold its shape.

Conclusion:

Quiche is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. With its flaky crust, savory filling, and endless variations, quiche is sure to please everyone at your table. So next time you're looking for a quick and easy meal, give quiche a try.
