Number Of Ingredients 10

2 lbs. stew meat
2 onions chopped
2 tbsp. oil
1 can mushrooms
4 or more potatoes
1 can mushroom soup
3/4 cup milk
3/4 cup sour cream
salt and pepper to taste
2 cups shredded cheese

Steps:

  • 1.) Brown and season meat and onions in oil. Drain mushrooms and add enough water to make 1 cup. Add to meat and simmer 2 hours or until meat is done. 2.) Pour meat mixture into baking dish and layer potatoes on top. Mix soup with milk and sour cream and pour over potatoes. Sprinkle with cheese. Bake uncovered @ 300º for 1 1/2 hours.

Tips:

  • Choose high-quality beef. Look for meat that is well-marbled and has a bright red color. Avoid meat that is brown or gray.
  • Cut your beef against the grain. This will help the meat to be more tender when it is cooked. Make sure to cut the meat into thin strips, about 1/4 inch thick.
  • Use a well-seasoned cast iron skillet. A cast iron skillet will help to evenly cook the meat and give it a nice crust. If you don't have a cast iron skillet, you can use a regular skillet over medium-high heat.
  • Don't overcrowd the skillet. If you overcrowd the skillet, the meat will not cook evenly and it will be more likely to stick to the pan. Make sure to cook the meat in batches if necessary.
  • Cook the meat until it is browned on all sides. This will help to develop the flavor of the meat and give it a nice crust. Once the meat is browned, you can remove it from the skillet and set it aside.
  • Make the gravy. While the meat is cooking, you can make the gravy. The gravy is made with the drippings from the skillet, some flour, and some milk. Simply whisk the flour into the drippings until a roux is formed. Then, slowly whisk in the milk until the gravy is smooth and thick.
  • Serve the beef and gravy over mashed potatoes or egg noodles. This is a classic comfort food dish that is sure to please everyone at the table.

Conclusion:

Connecticut Beef Supper is a delicious and easy-to-make dish that is perfect for a weeknight meal. The beef is tender and flavorful, and the gravy is rich and creamy. This dish is sure to become a favorite in your home.
