8 heaped tbsp icing sugar
2 tsp ground ginger
crystallised ginger , roughly chopped, to decorate (optional)

Tips:

  • Use fresh ginger: Fresh ginger provides the best flavor for this shortcake. If you only have ground ginger, you can use 1 teaspoon, but the flavor will be less intense.
  • Don't overmix the dough: Overmixing the dough will make the shortcake tough. Mix it just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough before baking helps to develop the flavor and makes it easier to roll out.
  • Bake the shortcake until it is golden brown: The shortcake is done baking when it is golden brown on top and a toothpick inserted into the center comes out clean.
  • Serve the shortcake warm or at room temperature: Serve the shortcake warm or at room temperature with your favorite toppings, such as whipped cream, ice cream, or fresh fruit.

Conclusion:

Congresbury Ginger Shortcake is a delicious and easy-to-make treat that is perfect for any occasion. With its unique flavor and light texture, this shortcake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this recipe a try!
