CONFETTI CHICKEN WRAPS

These wraps are so yummy and healthy. Even my non-veggie eating 4 year old scarfs these down. They are so quick to throw together that they are one of our few "regular" menu items. This is another recipe from The Mom's Guide to Meal Makeovers.

Time 30m

Yield 1-2 wraps, 4-8 serving(s)

Number Of Ingredients 11

1 tablespoon canola oil
1 large orange bell pepper, cut into 1-inch strips
1 lb boneless skinless chicken breast half, sliced into thin strips
1/2-1 teaspoon ground cumin
1/2-1 teaspoon chili powder
1 (15 ounce) can pinto beans, drained and rinsed
1 cup frozen corn kernels, thawed
1 cup shredded reduced-fat cheddar cheese
3/4 cup salsa
6 -8 flour tortillas (8 inch)
1/2 cup reduced-fat sour cream (optional)

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat. Add bell pepper and cook, stirring frequently, until tender, about 5 minute.
  • Add the chicken, cumin, and chili powder and cook until the chicken is no longer pink, 4-5 minutes.
  • Stir in the beans, corn, cheese, and salsa and cook until heated through and the cheese melts, about 2 minutes.
  • Meanwhile, stack the tortillas on a microwave-safe plate, uncovered, and heat in the microwave until warmed through, 30-45 seconds.
  • Assemble by placing the chicken mixture down the center of each tortilla. Wrap burrito-style and serve with sour cream as desired.

Time 20m

Yield 2 wraps

Number Of Ingredients 12

1 ounce ham (about 2 or 3 slices of deli-cut ham)
1 ounce turkey (about 2 or 3 slices of deli-cut turkey)
1 ounce swiss cheese (about 2 slices of deli-cut cheese)
1 hard-cooked egg, chopped
4 leaves romaine lettuce, finely shredded (about 1 cup)
1/4 cup yellow bell pepper, finely chopped
1/4 cup red onion, finely sliced and chopped
1/4 cup cucumber, peeled, seeded, and finely chopped
1 tomatoes, seeds removed, chopped
1 small carrot, grated
2 tablespoons reduced-calorie thousand island dressing
2 large tortillas

Steps:

  • Tightly roll ham slices and cut into thin strips. Do the same with turkey and Swiss cheese.
  • Toss with vegetables that have been chopped and shredded. Your mix should look like confetti and be almost moist enough to enjoy without dressing.
  • Pack it to go in a plastic bowl. Take tortilla wraps and dressing on the side. Assemble when you're ready to eat. Put a tablespoon of dressing on a large tortilla wrap and mound "confetti" on top. Roll and enjoy.
  • *You can use plain or flavored tortillas for your wraps.*.

Tips:

  • Choose colorful tortillas: Use brightly colored tortillas to make your wraps more festive and appealing.
  • Add a variety of fillings: Don't be afraid to get creative with your fillings. Try different combinations of meats, vegetables, cheeses, and sauces.
  • Make sure the tortillas are warm and pliable: This will make them easier to roll and prevent them from cracking.
  • Use a sharp knife to cut the tortillas: This will help you get clean, even cuts.
  • Serve the wraps immediately: Confetti wraps are best when served fresh and warm.

Conclusion:

Confetti wraps are a fun and easy way to add some festive flair to your next party or gathering. They're also a great way to use up leftover ingredients. So next time you're looking for a quick and easy appetizer or snack, give confetti wraps a try!
