Yield 8 cups

Number Of Ingredients 13

1 1/2 cups dry whole-wheat couscous (or pearl/israeli couscous)
2 cups boiling water
3 - 4 green onions, finely chopped, including tops
1 red bell pepper, seeded and finely diced
1 carrot, grated
1 - 2 cup finely shredded red cabbage
1/2 cup finely chopped fresh parsley
1/2 cup golden raisins or chopped dried apricots
1 juice of 1 lemon
1/4 cup seasoned rice vinegar
1 tablespoon olive oil
1 teaspoon curry powder
1 1/2 teaspoons salt

Steps:

  • In a large bowl, combine couscous and boiling water. Stir to mix, then cover and let stand until all the water has been absorbed, 5 to 10 minutes. Fluff with a fork. Add green onions, bell pepper, carrot, cabbage, parsley, and raisins or apricots. In a small bowl mix lemon juice, vinegar, oil, curry powder, and salt. Add to salad and toss to mix. Serve at room temperature or chilled.

Tips:

  • Prepare the couscous properly: Fluff the couscous with a fork before cooking to separate the grains. Use the right amount of water or broth to achieve the desired texture.
  • Use fresh, colorful vegetables: Choose a variety of vegetables with different colors and textures, such as cherry tomatoes, cucumber, red onion, and bell pepper. This will make the salad more visually appealing and nutritious.
  • Make a flavorful dressing: Use a combination of olive oil, lemon juice, herbs, and spices to create a tasty dressing that complements the couscous and vegetables. Experiment with different flavor combinations to find your favorite.
  • Add some protein: For a more filling salad, add some cooked chicken, shrimp, or feta cheese. This will also make the salad more nutritious.
  • Serve immediately or chill: Confetti couscous salad is best served immediately after making, but it can also be chilled for later. If you're chilling the salad, let it come to room temperature for about 30 minutes before serving.
