Number Of Ingredients 8

1 pound ground beef
1 medium onion, finely chopped
1 teaspoon garlic powder
4 medium potatoes, peeled and quartered
3 medium carrots, cut into 1-inch chunks
1 package (9 ounces) frozen cut green beans
1 package (10 ounces) frozen corn
1 can (14-1/2 ounces) Italian diced tomatoes, undrained

Steps:

  • In a large skillet, cook the beef, onion and garlic powder over medium heat until meat is no longer pink and onion is tender, 5-7 minutes, breaking beef into crumbles; drain., In a 3-qt. slow cooker, layer the potatoes, carrots, beans and corn. Top with beef mixture. Pour tomatoes over the top. Cover and cook on low until potatoes are tender, 8-10 hours.

1/3 c water
2 Tbsp butter
1 onion, diced
1.5 lb potatoes, cubed
1/2 c bell pepper, chopped
2 oz pimiento, finely chopped
1/2 tsp salt
1/4 tsp pepper
1/2 c cheddar cheese, shredded
3 slice bacon, cooked and crumbled

Steps:

  • 1. Combine potatoes and water in a 2 quart casserole.
  • 2. Cover and microwave at high power 8 to 10 minutes or until potatoes are tender, stirring after 4 minutes.
  • 3. Drain; add butter, stirring until butter melts.
  • 4. Add onion, bell pepper, pimiento, salt and pepper.
  • 5. Bake at 375 for 25 minutes; sprinkle with cheese and bacon.
  • 6. Bake an additional 5 minutes or until cheese melts.
