It just doesn't get much easier than this fool-proof rice sidedish. It won't look like much when it goes in the oven, but trust me, it comes out perfect every time. I've been making it for holiday dinners for years. It takes 5 minutes or less to throw together and can go in the oven with those other last minute dishes or prepare it ahead and reheat in the microwave at serving time if oven space is a problem. Note: The original recipe called for 1/2 cup butter but I found that to be excessive.

- Set oven to 350°F.
- Brown the sausage, drain. I like to put it in a food processor and hit pulse a few times, I don't like the larger pieces but don't go so far as to make a paste!
- Whisk the eggs and seasonings in a bowl,.
- add milk.
- Spray a 9x13" pan with cooking spray.
- Layer the ingredients as follows; all the sausage, then a layer of cheese, then half the bag of hash browns, then the cheese and the rest of the hash browns. Pour the egg/milk/ seasonings mixture over all.
- Cover with foil bake for one hour, check for doneness, mine usually take a bit longer, but everyone's oven is different.
- When done top with more shredded cheese and let rest for 10 minutes.
- Serve with fruit salad for a delightful brunch!

- Spray 13x9" baking pan, or lightly grease.
- In medium saucepan, combine soups, water, and butter or margarine.

- 1. Prepare rice mix according to pkg. instructions.
- 2. Meanwhile, saute onions in butter until translucent and tender. Remove onions from heat and stir in flour. Mix well until all trace of flour disappears. Drain mushrooms, reserving liquid, and add enough chicken broth to mushroom liquid to make 1 1/2 cups.
