6 boneless, skinless chicken breasts (about 3 1/2 pounds)
4 envelopes Italian dressing mix
2 tablespoons vegetable oil
2 tablespoons unsalted butter
1 pound white mushrooms, sliced
Kosher salt
One 10 3/4-ounce can cream of mushroom soup
6 ounces cream cheese
3/4 cup dry white wine
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat the chicken breasts in the dressing mix.
  • Heat the oil in a large nonstick skillet over medium-high heat until very hot. Add the chicken and cook undisturbed until well browned, about 4 minutes. Turn the chicken, add the butter to the pan, and cook until the chicken is just golden brown on the reverse side, 3 minutes more. Transfer the chicken to a large baking dish.
  • To the skillet, add the mushrooms and a pinch of salt; cook, stirring occasionally, until golden brown, about 5 minutes. Spoon the mushrooms on top of the chicken.
  • In a medium saucepan combine the soup, cream cheese and wine. Stir over medium-high heat until well blended and heated through. Pour the sauce over the chicken and mushrooms.
  • Bake, uncovered, until the chicken is cooked through, 1 hour. Sprinkle with parsley and serve.

1 lb ground beef
1 (15 ounce) can tomato sauce
1 (8 ounce) package cream cheese
1/4 cup sour cream
1 cup small curd cottage cheese
1/2 cup chopped green onion
2 tablespoons chopped green peppers
2 tablespoons melted butter

Steps:

  • Cook noodles; drain and set aside.
  • Brown meat; drain.
  • Add tomato sauce to beef; remove from heat.
  • In a separate bowl, mix cream cheese, cottage cheese, sour cream, onions and peppers.
  • Butter a casserole dish and spread 1/2 the noodles in the bottom.
  • Cover noodles with 1/2 the cheese mixture, then 1/2 the meat mixture, then 1 more layer of noodles, then cheese mixture and then meat mixture.

4 slices process American cheese
3 eggs
1-1/2 cups milk

⅛ teaspoon dried dill weed

4 chicken breasts, boneless and skinless
1 c chicken broth
2 clove garlic
2 wedges of onion
4 c pepperidge farm herb seasoned stuffing mix
1/2 c butter
1 can(s) cream of chicken soup
1 pt (16oz) sour cream
8 oz frozen broccoli - thawed (optional)
**YOU MAY SUBSTITUTE 8 OZ OF ANY FROZEN VEGGIE YOU WANT FOR THE BROCCOLI.

Steps:

  • 1. Place chicken breasts, broth, garlic, and onion in a skillet and bring just to a boil over medium high heat. Turn heat down to medium, cover and simmer until chicken is no longer pink - about 15-20 minutes.
  • 2. Remove chicken from skillet, and shred with a fork and set aside. Reserve the broth (this should equal 1 cup, but if it doesn't, add enough canned broth to equal a cup).
  • 3. Melt butter and pour over stuffing mix in a bowl and whisk with a fork to blend. Spread 1/2 of the stuffing/butter mixture in the bottom of a 9x13 inch baking dish.
  • 4. Meanwhile, blend the soup, sour cream and reserved broth together with a wire whisk. Place shredded chicken over the layer of stuffing in baking dish. If using broccoli, spread it over the chicken. Pour soup mixture over broccoli and chicken, then top with the remaining stuffing. Bake casserole in a 350 degree oven for 30 minutes, or until hot and bubbly. Serve and enjoy!!!!!

  • Put 1/2 the cheese in the bottom of a 13x9 (ungreased) baking dish.
  • In a skillet, melt butter and cook the mushrooms and green onions until tender.

My grandmother used to make this casserole alot, especially for Sunday dinner. It has always been a family favorite, hope you like it too!

1 (8 ounce) package egg noodles
1 1/2 lbs ground beef or 1 1/2 lbs ground chuck
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon salt
pepper
1/2 teaspoon garlic salt
2 (8 ounce) cans tomato sauce
1 cup cottage cheese
1 cup sour cream
6 green onions, chopped
1/2 cup green bell pepper, chopped
3/4 cup grated cheddar cheese

Steps:

  • Cook noodles in salted water; drain.
  • Melt butter or margarine and saute green bell pepper.
  • Add meat and cook until meat loses its pink color.
  • Drain.
  • Add salt, pepper, garlic salt and tomato sauce.
  • Simmer for 5 minutes, then remove from heat.
  • In a bowl, combine cottage cheese, sour cream, onions & noodles.
  • Gently mix together.
  • Alternate layers of noodles & meat mixture in a 2-qt.
  • casserole.
  • Top with cheese and bake 30 minutes at 350.

1 (4 to 5-pound) prime boneless beef chuck roast, tied
Kosher salt and freshly ground black pepper
All-purpose flour
Good olive oil
2 cups chopped carrots (4 carrots)
2 cups chopped yellow onions (2 onions)
2 cups chopped celery (4 stalks)
2 cups chopped leeks, white and light green parts (2 to 4 leeks)
5 large garlic cloves, peeled and crushed
2 cups good red wine, such as Burgundy
2 tablespoons Cognac or brandy
1 (28-ounce) can whole plum tomatoes in puree
1 cup chicken stock, preferably homemade
1 chicken bouillon cube
3 branches fresh thyme
2 branches fresh rosemary
1 tablespoon unsalted butter, at room temperature

Steps:

  • Preheat the oven to 325 degrees F. Pat the beef dry with a paper towel. Season the roast all over with 1 tablespoon salt and 1 1/2 teaspoons pepper. Dredge the whole roast in flour, including the ends. In a large Dutch oven, heat 2 tablespoons olive oil over medium heat. Add the roast and sear for 4 to 5 minutes, until nicely browned. Turn and sear the other side and then turn and sear the ends. This should take 4 to 5 minutes for each side. Remove the roast to a large plate. Add 2 tablespoons olive oil to the Dutch oven. Add the carrots, onions, celery, leeks, garlic, 1 tablespoon salt, and 1 1/2 teaspoons pepper and cook over medium heat for 10 to 15 minutes, stirring occasionally, until tender but not browned. Add the wine and Cognac and bring to a boil. Add the tomatoes, chicken stock, bouillon cube, 2 teaspoons salt, and 1 teaspoon pepper. Tie the thyme and rosemary together with kitchen string and add to the pot. Put the roast back into the pot, bring to a boil, and cover. Place in the oven for 2 1/2 hours, until the meat is fork tender or about 160 degrees F internally. Turn the heat down to 250 degrees F after about an hour to keep the sauce at a simmer. Remove the roast to a cutting board. Remove the herb bundle and discard. Skim off as much fat as possible from the sauce. Transfer half the sauce and vegetables to a blender or a food processor fitted with the steel blade and puree until smooth. Pour the puree back into the pot, place on the stovetop over low heat, and return the sauce to a simmer. Place 2 tablespoons flour and the butter in a small bowl and mash them together with a fork. Stir into the sauce and simmer for 2 minutes, stirring until thickened. Taste for seasonings. Remove the strings from the roast, and slice the meat. Serve warm with the sauce spooned over it.

This can be made ahead and refrigerated overnight if you like, then baked the next day. Great for a weekend when you have lots of stuff going on!

1 lb sausage (I use Jimmy Dean)
24 ounces frozen hash browns, with onion and peppers
6 eggs
2 cups milk
1 teaspoon ground mustard
1 teaspoon salt
1/2 tsp.black pepper
1 dash hot sauce (optional)
8 ounces cheddar cheese, shredded (more for the topping if desired)

Steps:

  • Set oven to 350°F.
  • Brown the sausage, drain. I like to put it in a food processor and hit pulse a few times, I don't like the larger pieces but don't go so far as to make a paste!
  • Whisk the eggs and seasonings in a bowl,.
  • add milk.
  • Spray a 9x13" pan with cooking spray.
  • Layer the ingredients as follows; all the sausage, then a layer of cheese, then half the bag of hash browns, then the cheese and the rest of the hash browns. Pour the egg/milk/ seasonings mixture over all.
  • Cover with foil bake for one hour, check for doneness, mine usually take a bit longer, but everyone's oven is different.
  • When done top with more shredded cheese and let rest for 10 minutes.
  • Serve with fruit salad for a delightful brunch!

1 (8 ounce) package egg noodles
1 tablespoon margarine
1 pound ground beef chuck
2 (8 ounce) cans tomato sauce
1 cup cottage cheese
1 (8 ounce) package cream cheese, softened
¼ cup sour cream
⅓ cup chopped green onions
1 tablespoon finely chopped green bell pepper
2 tablespoons margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat 1 tablespoon margarine in a large heavy skillet over medium-high heat. Cook ground beef until evenly brown. Stir in tomato sauce; remove from heat. In a medium bowl, combine cottage cheese, cream cheese, sour cream, green onion and green pepper.
  • Spread 1/2 the cooked noodles in the casserole dish. Cover with cheese mixture, then the remaining noodles. Pour melted margarine over the noodles. Spoon meat sauce on top and spread to cover noodles.
  • Bake in preheated oven for 30 minutes.
