For the Marinade:
2 pounds pork roast
1 pound baby potatoes
2 tablespoons freshly ground black pepper
5 cloves garlic, chopped
1 tablespoon adobo powder
3 tablespoons olive oil
1/2 tablespoon white wine vinegar
1 envelope Sazon with paprika and oregano
For the Stuffing:
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
3 cloves garlic, smashed
salt, to taste
1 teaspoon white wine vinegar
2 piquillo peppers, chopped
1 onion, chopped
2 ounces cooking ham, cubed
1/2 green pepper, chopped
5 stuffed green olives, chopped
For Braising Liquid:
4 tablespoons dry red wine
1 bay leaf
2 teaspoons sofrito
1/2 cup beef broth
2 tablespoons tomato sauce
1/4 teaspoon Worcestershire Sauce
3 tablespoons olive oil
1/2 cup water
1 tablespoon cornstarch mixed with 1 tablepoon water

Steps:

  • Clean the meat. Cut holes through the meat from both ends lengthwise, making sure they meet in the middle. Mix stuffing ingredients and stuff meat all the way through hole. Mix marinade ingredients and marinate the meat, covered, in the refrigerator, overnight. Add oil and bay leaf to the pot and over high heat, brown the meat on all sides. Lower heat to medium and add the braising ingredients. Place in slow cooker and cook on high for 1 1/2 hours. Add potatoes and cook on high 1/2 hour more or until the potatoes are tender. Remove meat to cutting board and tent with foil. Add cornstarch to braising liquid and bring to a boil. Reduced liquid by half. Serve meat sliced in 1/2-inch thick slices on platter surrounded by potatoes and covered with braising liquid.

20 fresh tomatillos, husks removed
2 large tomatoes, chopped
7 serrano chile peppers, chopped (wear gloves)
10 fresh chile de arbol peppers, chopped (wear gloves)
5 cloves garlic, divided
salt to taste
2 pounds pork stew meat, coarsely chopped

Steps:

  • Place the tomatillos, tomatoes, serrano peppers, chile de arbol peppers, and 3 whole garlic cloves into a saucepan over medium-low heat, and cool until the mixture is juicy and the peppers are tender, about 10 minutes. Remove and discard the garlic cloves. Pour the mixture into a blender, and blend until smooth, about 1 minute; set sauce aside. Mince 1 clove of garlic, or amount to taste, and mix into the sauce; season to taste with salt.
  • Mince 1 more clove of garlic, and place into a skillet with the pork over medium heat. Cook covered until the pork is no longer pink and the juices run clear, stirring often, about 30 minutes. Pour the blended sauce over the meat, and reduce heat to a simmer; cook, stirring often, until the pork is tender, 5 to 10 more minutes.

This is another recipe that my friend Vicky Gomez gave me - it is for a type of meatloaf. She makes it by poaching it(wrapped in foil)and then serves it cold and sliced very thin on crackers or toasted pita or cocktail breads. I used most of her ingredients but instead of poaching it - I made it in the oven. We use this as an appetizer or canapés as well. Didn't allow for chilling or cooling times, which is approximately 10-12 hours.

1 lb lean ground beef
1 lb ground lean pork
1/2 lb ground lean ham
1 yellow onion, grated
2 garlic cloves, minced
1 teaspoon salt, to taste
1 teaspoon mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon fresh ground black pepper, to taste
1/4 teaspoon oregano
1/4 teaspoon ground bay leaf powder
4 eggs, lightly beaten
1 cup cracker meal or 1 cup dry breadcrumbs
freshly grated parmesan cheese, for sprinkling (optional)
5 eggs, beaten
1 cup cracker meal or 1 cup dry breadcrumbs

Steps:

  • Preheat oven to 300ºF.
  • Mix all ingredients well by hand except for breading ingredients.
  • Divide into 3-4 portions and roll each into a cylinder or log about 1-1/2"-2" in circumference.
  • Place in plastic wrap; shape into logs and refrigerate for about 2 hours, until the meat is firm to the touch.
  • First, roll the logs in beaten egg and then in Italian seasoned breadcrumbs or cracker meal or dry bread crumbs.
  • Roll each log separately and wrap in foil making sure the seams are well sealed.
  • Place on an ungreased baking sheet.
  • Bake for an hour.
  • Remove from oven DO NOT open foil.
  • Allow to cool until it reaches room temperature.
  • Refrigerate for 8 hours or overnight.
  • Cut into thin slices and serve cold with toasted pita chips, Carr's water biscuits, or Parmesan rosemary crisps.
  • As a nice topping, you can use a slice of hard boiled egg and a strip of red pimento on top.

3 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1/4 cup plain flour
1/4 teaspoon salt (or more if you wish)
1/2 teaspoon pepper (freshly ground)
3 bay leaves
3 sprigs thyme (fresh)
1 kg lean beef (cubed)
3 garlic cloves (large, minced or 3 teaspoons of jarred garlic)
1 carrot (medium sliced)
1 onion (large fine sliced but I do chunky)
6 new potatoes (small halved optional)
2 celery ribs (sliced optional)
1 cup red wine
1 cup beef stock
2 tablespoons parsley (fresh finely chopped)

Steps:

  • Preheat oven to 180C fan forced (200C normal).
  • Whisk the soy, worcestershire, flour, seasonings, bay leaves and thyme sprigs in a casserole dish (or heavy bottomed pot that can go into the oven).
  • Briefly cook over a medium heat until the flour has dissolved.
  • Add the cubed beef, garlic, carrot, (potatoes and celery if using), onion, red wine and beef stock.
  • Stir with a wooden spoon, cover and cook in the oven for about 1 1/2 hours until the beef is tender, stirring a couple of time.
  • Taste the sauce for seasoning and adjust if required.
  • If not using the potatoes serve with mashed potatoe or rice.
