COLORFUL POTATO SOUP

I had to post this because it is one of my daughter's favorite meals. We top it with shredded cheese, and have yeast rolls on the side. It isn't spicy, so most kids like it. This recipe came from "Now You're Cookin" Cookbook.

I decided to add some character to a basic potato chowder with a jar of roasted red peppers. The extra flavor gives a deliciously different twist to an otherwise ordinary soup. -Mary Shivers, Ada, Oklahoma

Tips:

  • Choose the right potatoes: For a creamy soup, use starchy potatoes like Russet or Yukon Gold. Waxy potatoes like Red or New Potatoes will hold their shape better, making them ideal for soups with a chunky texture.
  • Roast the vegetables: Roasting the vegetables before adding them to the soup enhances their flavor and adds a smoky depth to the soup.
  • Use flavorful broth: The broth is the base of the soup, so using a flavorful broth is essential. You can use store-bought broth or make your own using vegetables, herbs, and spices.
  • Don't overcook the potatoes: Overcooked potatoes will become mushy and lose their flavor. Cook them until they are tender but still hold their shape.
  • Add cheese and cream for a richer flavor: If you like, you can add cheese or cream to the soup for a richer flavor. Be sure to stir until the cheese is melted and the cream is well combined.
  • Garnish with fresh herbs: Before serving, garnish the soup with fresh herbs like chives, parsley, or dill for an extra pop of flavor and color.

Conclusion:

This colorful potato soup is a hearty, flavorful, and visually appealing dish perfect for a cold day. With its combination of roasted vegetables, flavorful broth, and tender potatoes, this soup is sure to be a hit with your family and friends. So next time you're looking for a comforting and delicious meal, give this colorful potato soup a try!
