COLORFUL CORN & VEGGIE CASSEROLE
This is an easy side or vegetarian main. Lots of vegetables and gooey cheese baked into a yummy casserole. I use a frozen mixed vegetable with corn, diced carrots, peas, & green beans. This is good served with roasted chicken or baked fish. Add a green salad & dinner is ready!

Tips:
- Use fresh or frozen corn. Fresh corn is best, but frozen corn will work just as well. If using frozen corn, thaw it before using.
- Add some spice. A little bit of chili powder or cumin can add a nice kick of flavor to the casserole.
- Use a variety of cheeses. A combination of cheddar, Monterey Jack, and Parmesan cheese will give the casserole a rich and flavorful taste.
- Don't overcook the casserole. The casserole is done when the center is set and the top is golden brown. Overcooking will make the casserole dry and tough.
- Serve the casserole warm. The casserole is best served warm, right out of the oven. You can also make it ahead of time and reheat it before serving.
Conclusion:
Colorful Corn Casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It is made with fresh or frozen corn, a variety of cheeses, and a few simple spices. The casserole is baked until golden brown and bubbly. Serve it warm and enjoy!
