3 tablespoons cider vinegar
2 tablespoons finely chopped pickled jalapeno plus 1 tablespoon brine
1 teaspoon honey
Kosher salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
1 cup frozen corn, thawed
1/2 cup roughly chopped fresh cilantro
4 scallions, chopped
2 plum tomatoes, seeded and chopped
1 red bell pepper, stemmed, seeded and chopped
Tortilla chips, for serving

Steps:

  • Whisk together the vinegar, pickled jalapeno brine, honey, 1/2 teaspoon salt and several grinds of pepper in a large bowl. Whisk in the oil to make a smooth dressing.

My local grocery deli sells this for $7.00/lb! So of course I had to come up with my own recipe. We love it as a side dish with a great grilled steak or like a dip. Mix it with a little cottage cheese and dip with potato chips...any way you eat it, its great!

3 can(s) black eyed peas-drained and lightly rinsed
1 - medium jalapeño pepper, seeded and finely chopped
1 tablespoon(s) dehydrated chopped garlic-or fresh, your choice
1 can(s) diced tomatoes with jalapeños
1 bunch(es) green onions, chopped
1 tablespoon(s) dehydrated mexican oregano
1/2 cup(s) your favorite italian salad dressing
- salt and pepper to taste

Steps:

  • Mix all ingredients, chill for at least 1 hour and serve.
  • As with most things, the longer it sits the better it tastes. Store in air tight container. Not sure how long it will store for, in our house this recipe doesn't last longer than a couple of days. LOL. Enjoy!
