1 medium onion, chopped
3 tablespoons olive oil
1 cup red lentil
2 cups rice
2 teaspoons salt
500 ml coconut milk
1 1/2 cups water

Steps:

  • Sauté the onion in the oil until soft and golden (5-8 minutes).
  • Add the lentils and 1 cup of water, and cook, covered, for about 30 minutes.
  • Stir in the rice and the salt. Stir in the coconut milk.
  • Cover and simmer for about 20 minutes more, until rice is tender and the liquid has been absorbed.

1/2 cup oil
1/2 cup onion, diced
1/2 cup fideos, pasta
2 cups rice
4 cups water
1 tablespoon salt

Steps:

  • Put 1/2 inch oil in bottom of pan.
  • Add onions; fry for a couple of minutes.
  • Add fideos which are like vermicelli.
  • Cook until the fideos are butterscotch colored; do not burn.
  • Wash rice.
  • Add rice and water to the pan; add salt; taste water to make sure flavor is right.
  • Cook on medium heat, uncovered, stirring frequently, until all the water is absorbed.
  • Cover and simmer on lowest heat until the bottom is browned but not burned.

This is a very good rice pudding recipe that I got from a box of Carolina White Rice. I usually add the flake coconut as my optional ingredient, but it is also terrific with diced mango. It does not work well with skim milk or 1% milk, but is ok with anything 2% or more.

1 cup carolina white rice (or any other brand of long grain white rice)
1 (1 3/4 ounce) package instant pudding mix, I use Vanilla or 1 (1 3/4 ounce) package coconut cream
2 cups half-and-half (or whole milk)
1/2 cup flaked coconut, chopped pistachios, raisins, macadamia nuts, chocolate chips, fun chips (optional) or 1/2 cup diced fresh fruit (optional)
whipped cream, chocolate curls, maraschino cherries for garnish

Steps:

  • Prepare rice according to package directions. Set aside to cool.
  • In mixing bowl, combine pudding mix, and Half and Half.
  • Mix for 2 minutes.
  • Fold in rice and desired choice of add ins.
  • Spoon into 6 dessert cups.
  • Chill.
  • Garnish as desired.
  • Enjoy.
