ORIGINAL OLD BAY® COLESLAW

Original Old Bay® Coleslaw image

This recipe used to be printed on the Old Bay® cans, but it was removed a decade or more ago; it is very different than the one on the current Old Bay website. I much prefer this one and even today occasionally see a posting from someone looking for the old recipe from the Old Bay can. Well, here it is!

TARRAGON COLESLAW

Tarragon Coleslaw image

This is my favorite cole slaw recipe. It's not as saucy as many others, and I personally like the cabbage flavor that comes through. But if you like your cole slaw wetter, then just add more mayonnaise and the other dressing ingredients in relative amounts. This recipe does need time for the flavors to blend. It can be eaten immeditely, but it's just not as good.

SHRIMP COLE SLAW

Shrimp Cole Slaw image

A few years ago my husband and I were in Kemah, and with our meal, we were served regular coleslaw with bits of shrimp in it. The slaw was good but we felt that it needed something to spice it up, so I came up with my own recipe. During the hot summer months we enjoy it as a light meal with toasted garlic bread, on these occasion I use 2 pounds of shrimp. Every time I serve this salad it is a big hit and I never have any left over. In order to save preparation time I have the grocer steam the shrimp in Cajun spice, while I do the rest of my shopping. NOTE: The dressing will taste stronger before you toss it with the salad, the salad dilutes the taste of the dressing.

COLESLAW

Coleslaw image

This classic version of coleslaw is also the simplest, with a light, creamy, tangy-sweet dressing spiked with celery seeds. For the best result, make the coleslaw a few hours ahead and refrigerate it to allow all the flavors to marry and soak into the cabbage. Celery seeds add strong, aromatic, grassy notes, but simply skip them if they're unavailable. For extra flair, you could add ½ cup of your favorite chopped fresh herb, such as parsley, tarragon or dill. Leftovers make a great topping for tacos, hot dogs, sliders and sandwiches.

Time 10m

Yield 8 to 10 servings

Number Of Ingredients 8

1 cup mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon granulated sugar
1/2 teaspoon celery seeds
Kosher salt and black pepper
1 medium head green cabbage (about 2 pounds)
1/2 medium head purple cabbage (about 1 pound)
2 carrots, grated on the large holes of a box grater

Steps:

  • In a very large bowl, combine mayonnaise, vinegar, sugar and celery seeds. Season with salt and pepper, and mix until smooth.
  • Shred the cabbage: Using a sharp knife, quarter and core the green cabbage. Arrange quarters cut side down, so they sit flat and stable. Thinly slice them lengthwise for longer shreds (or crosswise for shorter shreds). Repeat with the purple cabbage. You should get about 16 total cups of shredded green and purple cabbage.
  • Add all the shredded cabbage and the shredded carrots to the bowl, season with salt and pepper, and toss until well combined. (Hands work best here.)
  • Transfer coleslaw to a serving bowl and serve immediately, or cover and refrigerate 3 hours ahead of time and up to overnight for the best texture, and serve chilled.

Tips:

  • For a refreshing and crisp coleslaw, use a combination of green and red cabbage. Shred the cabbage finely using a sharp knife or a mandoline slicer.
  • To add a bit of sweetness to the coleslaw, use a combination of carrots and apples. Peel and grate the carrots and apples using a box grater or a food processor fitted with a grating blade.
  • For a creamy and tangy dressing, use a combination of mayonnaise, sour cream, and Dijon mustard. Season the dressing with salt, pepper, and a squeeze of lemon juice.
  • To add a briny and savory flavor to the coleslaw, use a handful of cooked and chopped bay shrimp. You can also use cooked and chopped lobster or crab meat.
  • For a pop of freshness and flavor, add a handful of chopped tarragon leaves to the coleslaw. You can also use chopped dill, parsley, or chives.
  • Serve the coleslaw chilled, as a side dish or as a topping for tacos, burgers, or sandwiches.

Conclusion:

Coleslaw with Bay Shrimp and Tarragon is a delicious and refreshing salad that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like it creamy or tangy, crunchy or soft, this coleslaw is sure to please everyone at your table. So next time you are looking for a quick and easy side dish, give this coleslaw a try. You won't be disappointed!
