4 cups finely shredded green cabbage
1/2 cup green sweet pepper, diced (1/4-inch dice)
1/4 cup red pepper, diced (1/4-inch)

8 cups cabbage, finely chopped (about 1 head)
1/4 cup carrot, shredded (1 medium carrot)
2 tablespoons minced sweet onions
1/2 cup mayonnaise
1/3 cup honey
2 tablespoons milk
2 tablespoons buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice
1/2 teaspoon kosher salt
1/8 teaspoon fresh ground pepper

Steps:

  • Chop cabbage, carrot and onion into very small pieces, set aside.
  • In large bowl, combine remaining ingredients and beat until smooth.
  • Add slaw and mix well.
  • Cover and refrigerate for at least 2 hours before serving. (Don't skip this step, the flavor needs time to set into the slaw).
  • BTW, I like to make the dressing up and keep it in a squirt bottle in the fridge. When I use it, I have to microwave it a little to thin the honey, but it works since I always refrigerate the slaw before eating anyway.
  • Also, when we're dieting, I use less than half the dressing and it's still quite good!

1/2 head small cabbage, (shredded finely)
3 large carrots, peeled & shredded
2 Tbsp fresh or dried chive
1 small green onion, chopped finely
1 1/2 c mayonnaise
2/3 c sour cream
5-6 Tbsp honey ( use lesser amount & taste before adding remaining)
5 Tbsp apple cider vinegar
1 1/2 tsp coare black pepper
2 tsp onion powder
1 tsp kosher salt (optional) taste before adding

Steps:

  • 1. Cut Small head of cabbage in half and remove core with a sharp knife, then shred finely and add to a large bowl.
  • 2. Wash peel and grate or shred carrots.
  • 3. Add to bowl of shredded cabbage.
  • 4. Then add onion powder & Black Pepper I prefer using the coarse Restaurant Style. Or you can wait & add it to the Mayonnaise & Sour cream mixture, either way is okay.
  • 5. Next add apple cider vinegar to a small jar with lid, then add honey, and shake well to blend, till mixed together and save to add it to the mayonnaise and sour cream mixture.
  • 6. Add mayonnaise, sour Cream, and beat together to blend in a medium size bowl.Be sure to add the chopped green onion, and chopped chive, & salt if using, and blend well.
  • 7. Add mayonnaise mixture to shredded cabbage & carrots, and stir till mixture is evenly blended together. Taste and make adjustments if need be.
  • 8. Serve and enjoy. Garnish with green onion tops if desired. I discovered that this slaw added a crunchy addition to my Irish Sausage. Sausage and Cole Slaw all in one bite.
