Time 2h30m

Yield 8

Number Of Ingredients 6

14 ounces uncooked rotini pasta
2 cucumbers, chopped
½ onion, finely chopped
10 cherry tomatoes, quartered
¾ cup pitted black olives, sliced
1 cup Italian-style salad dressing

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain and cool by running cold water over the pasta in a colander set in the sink.
  • Combine cooked and cooled pasta with the cucumbers, onion, tomatoes, and olives in a large bowl. Pour the Italian dressing over the salad and stir to combine. Cover and refrigerate for at least two hours before serving.

Tips:

  • Use fresh, ripe tomatoes: The quality of your tomatoes will make a big difference in the flavor of your salad. Choose tomatoes that are firm and have a deep red color.
  • Blanch your tomatoes: Blanching your tomatoes will help remove the skins and make them easier to chop. To blanch tomatoes, simply drop them in boiling water for 30 seconds to 1 minute, then transfer them to an ice bath. Once they are cool, peel and chop them.
  • Use a variety of pasta shapes: Different pasta shapes will give your salad different textures. For example, penne or rigatoni will give your salad a hearty texture, while farfalle or fusilli will give it a lighter texture.
  • Add protein: Feel free to add cooked chicken, shrimp, or tofu to your salad for some extra protein.
  • Use a light dressing: You don't want to overpower the flavors of the tomatoes and pasta with a heavy dressing. Use a light vinaigrette or olive oil dressing instead.
  • Serve chilled: Cold pasta salad is best served chilled. You can make it ahead of time and store it in the refrigerator for up to 3 days.

Conclusion:

Cold pasta salads with tomatoes are a refreshing and delicious way to enjoy the flavors of summer. They are perfect for potlucks, picnics, or even just a quick and easy weeknight meal. Experiment with different ingredients and dressings to find your favorite combination. With so many possibilities, you're sure to find a cold pasta salad with tomatoes that you'll love.
