KALTER HUND

This is a recipe that was in my Grandmother's personal recipe collection. It translates from German to Cold Dog. It is very delicious layered cake that is kept in the refrigerator. Try it with chocolate wafers instead of butter cookies. Make sure you have a glass of milk ready with this dessert! This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs. For more information visit our Hints and Tips pages.

Time 3h30m

Number Of Ingredients 7

1 (16 ounce) package plain butter cookies
¼ cup rum
1 egg
¾ cup white sugar
1 teaspoon vanilla extract
¼ cup unsweetened cocoa powder
½ cup butter, melted

Steps:

  • Spread butter cookies out in a single layer on a baking sheet with sides. Brush or sprinkle with rum. Line a 9x5 inch loaf pan with aluminum foil, leaving enough extra at the sides to fold over the top for storage.
  • In a medium bowl, whip the egg and sugar together until thick and pale. Whisk in vanilla and cocoa powder until well blended, then stir in melted butter.
  • Line the bottom and sides of the prepared pan with butter cookies. Spread a 1/2 inch layer of chocolate cream over the bottom. Place another layer of cookies, followed by another layer of cream. Repeat until cream is gone, ending with cookies on the top. Fold aluminum foil over the top, and place in the refrigerator until firm, about 3 hours. Slice into 1/2 inch slices and serve.

HOT DOG PASTA SALAD

Hot Dog Pasta Salad image

The original recipe for this - which I've modified a bit - has been sitting in my computer recipe file for a long time - and I have no idea where it came from. At first I figured it was from the internet, but when I went looking with all my usual searching tools, I couldn't find it, so maybe it just showed up as an email virus attachment and parked itself in my recipe file, quietly waiting until I went insane enough to look for a salad recipe using hot dogs. Well, it happened one day last month and I decided to give it a go. I was sufficiently impressed with the results to share it with you. Oh, and kids seem to like this quite a lot as well. If you're going to serve it to little ones, make sure to cut the hot dogs up smaller (not just into circles) so as to avoid choking possiblities. Enjoy!

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

6 ounces macaroni or 6 ounces other small salad-type pasta
5 hot dogs, boiled and sliced in rounds (or smaller bits for young children to avoid choking hazard)
1/2 cup mayonnaise
1 tablespoon yellow mustard (no substitutes)
2 teaspoons cider vinegar
salt and pepper (may omit)
1/3 cup thinly sliced sweet gherkin
2 green onions, thinly sliced (use both green and white parts) or 1/8 cup chopped yellow onion

Steps:

  • Cook macaroni according to package directions, just until tender.
  • Drain and rinse well with cold water.
  • Meanwhile, cook hot dogs as desired- grill'em, boil'em or pan-fry; cool enough to handle, then slice into circles.
  • If small children will be eating this, cut the circles in halves or quarters to avoid choking hazards.
  • Combine mayonnaise, mustard, vinegar and salt & pepper in small bowl.
  • Place hot dogs and pasta in large bowl and add remaining ingredients.
  • Pour dressing over and toss gently with two spoons until all the bits are coated with dressing.
  • Chill for two hours or longer in refrigerator before serving.

Tips:

  • Choosing the Right Hot Dogs: Opt for high-quality hot dogs made with premium meats and avoid those with excessive fillers. Look for all-beef or a blend of beef and pork for the best flavor and texture.
  • Cooking the Hot Dogs: Boil the hot dogs in water until they reach an internal temperature of 165°F (74°C). This ensures they are cooked thoroughly while retaining their juiciness. Alternatively, you can grill or pan-sear the hot dogs for a smoky flavor and crispy exterior.
  • Preparing the Vegetables: Dice the celery, carrots, and onion into small pieces for a uniform texture and easy eating. Use fresh vegetables for the best flavor and crunch.
  • Choosing the Mayonnaise: Use high-quality mayonnaise made with real eggs for a rich and creamy flavor. Alternatively, you can use Greek yogurt or sour cream for a healthier option.
  • Adding Mustard and Relish: Adjust the amount of mustard and relish to your taste preferences. For a tangy kick, use Dijon mustard. Sweet relish adds a contrasting sweetness to the salad.
  • Chilling the Salad: Refrigerate the salad for at least 30 minutes before serving. This allows the flavors to meld and develop, resulting in a more cohesive and delicious dish.

Conclusion:

Cold dog salad is a classic summer dish that combines the flavors of hot dogs, vegetables, and creamy mayonnaise dressing. By following these tips, you can create a delicious and refreshing salad that is perfect for potlucks, picnics, and backyard barbecues. Experiment with different toppings and variations to create a cold dog salad that suits your taste buds and preferences. Enjoy this nostalgic and flavorful dish with family and friends during the warm summer months.
