Time 20m

Yield 4 serving(s)

Number Of Ingredients 11

1 lb asparagus, trimmed
1 tablespoon toasted sesame seeds
1 small garlic clove
1 teaspoon grated fresh ginger
2 tablespoons rice vinegar
2 tablespoons orange juice
2 teaspoons soy sauce
2 tablespoons vegetable oil
1 teaspoon sugar
1/4 teaspoon red chili pepper flakes
1/4 teaspoon sesame oil

Steps:

  • Bring lightly salted water to a boil in a medium skillet, add asparagus and cook until tender-crisp, about 5 minutes.
  • Immerse asparagus in ice water to stop the cooking.
  • Pat dry and arrange on a platter. Chill.
  • Just before serving, mix together the dressing ingredients and pour evenly over the asparagus. Serve on a platter.

Tips:

  • Choose the right asparagus: Look for asparagus that is firm and has tightly closed tips. Avoid asparagus that is wilted or has brown spots.
  • Trim the asparagus: Cut off the woody ends of the asparagus, about 1 inch from the bottom.
  • Prepare the vinaigrette: Whisk together the olive oil, vinegar, mustard, honey, salt, and pepper in a small bowl until well combined.
  • Cook the asparagus: Bring a large pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes, or until tender-crisp. Remove the asparagus from the boiling water and immediately transfer it to a bowl of ice water to stop the cooking process.
  • Drain and chill the asparagus: Once the asparagus is cool, drain it well and pat it dry. Place the asparagus in a serving dish and refrigerate for at least 30 minutes before serving.
  • Serve the asparagus: Drizzle the asparagus with the vinaigrette and top with chopped walnuts and crumbled goat cheese. Serve immediately.

Conclusion:

Cold asparagus vinaigrette is a refreshing and flavorful side dish that is perfect for summer gatherings. The asparagus is tender-crisp and the vinaigrette is tangy and slightly sweet. The walnuts and goat cheese add a nice crunch and creaminess to the dish. This recipe is also very easy to make and can be prepared ahead of time, making it a great option for busy weeknights.
