COCA COLA CHICKEN WINGS

You don't hear many murmurs about Coca Cola Chicken Wings in the States these days, but it was all the rage among Asians in the early 1990s! They're a once-in-a-while delicious treat.

Time 40m

Number Of Ingredients 10

2 pounds chicken wings ((900g))
2 tablespoons oil
3 slices ginger
1 can cola ((regular, not diet))
1 tablespoon Shaoxing wine
1 tablespoon dark soy sauce
2 tablespoons light soy sauce
1 piece of dried orange peel ((optional))
1 small cinnamon stick ((optional))
Salt ((to taste))

Steps:

  • Wash and clean the chicken wings. Cut the wings at the joint, and pat the chicken dry with a paper towel.
  • Pre-heat the wok until it starts to smoke. Add the oil, and spread it around to coat the bottom of the wok. Now add the ginger and the chicken wings. Spread out the wing pieces in a single layer, and lightly brown them for a few minutes on each side. The wok should be over high heat.
  • Now add the cola, Shaoxing wine, dark soy sauce, light soy sauce, and (if using), the orange peel and cinnamon stick. Bring it to a boil, cover the lid, and turn down the heat to medium. Let simmer for 12-15 minutes--until the sauce is almost dry (though there should still be a small pool of sauce at the bottom of the wok). Stir the wings, and add salt to taste.
  • Now turn up the heat, and quickly stir the wings until the sauce coats each piece. Serve!

Coke-Brined Grilled Chicken! image

Time 50m

Yield 4 serving(s)

Number Of Ingredients 10

4 chicken breast halves, with skin and bones
4 1/2 cups Coca-Cola
1/2 cup kosher salt
1/4 cup vegetable oil
2 tablespoons brown sugar
1 tablespoon kosher salt
1 tablespoon garlic powder
1 tablespoon mustard powder
1 tablespoon ground black pepper
2 teaspoons paprika

Steps:

  • Combine the salt and Coke. Stir well to dissolve.
  • Puncture your chicken several times with the tines of a fork.
  • Place it in the brine. Make sure all pieces are submerged. (I use a large round bowl); Cover.
  • Refrigerate at least 2 hours.
  • Prepare your rub. Be sure to combine well. (for the Mustard Powder I like to use "Colemanns").
  • When you are ready to grill the chicken. Prepare your grill so the chicken will be cooked over indirect heat.
  • Remove the chicken from the brine, and dry it well. (throw out the brine).
  • Rub your chicken pieces on both sides with the rub. Use it all!
  • Now let it sit for 15 min., so it can absorb the rub flavors.
  • Place it on the grill, skin side down for approximately 15-20 minutes. The skin should be nice and crispy brown.
  • Turn the pieces over and continue to cook for another 15-20 minutes.
  • You might like to serve it with your favorite BBQ Sauce on the side.
  • This also works well with chicken legs, but the cooking time will vary. The dark meat should test at 180°F in the thigh.

Tips:

  • Choose the right wings: Look for plump, meaty wings with smooth skin.
  • Make sure the wings are dry: Pat them dry with paper towels before you start cooking.
  • Don't overcrowd the pan: Cook the wings in batches if necessary.
  • Use a meat thermometer: To make sure the wings are cooked through, insert a meat thermometer into the thickest part of the wing. The internal temperature should read 165 degrees Fahrenheit.
  • Serve the wings hot: To ensure a crispy texture, serve the wings immediately out of the oven or fryer.

Conclusion:

Cola-brined chicken wings are a delicious and easy-to-make appetizer or main course. The cola brine helps to tenderize the chicken and gives it a slightly sweet and smoky flavor. These wings are sure to be a hit at your next party or gathering. Note: For best results, use a good quality cola. This will help to give the wings the best flavor.
