Yield Makes 4 servings

Number Of Ingredients 6

1 cup sugar
1/2 cup water
1/4 cup Cognac or other brandy
2 tablespoons fresh lemon juice
1 1/2 pounds firm fresh apricots, quartered lengthwise and pitted (4 cups)
Accompaniment: vanilla ice cream

Steps:

  • Cook sugar in a dry 12-inch heavy skillet over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel, 8 to 10 minutes. Carefully add water, then add Cognac and lemon juice (caramel will harden and steam vigorously) and cook over moderately low heat, stirring, until caramel is dissolved. Stir in apricots and simmer, stirring occasionally, until apricots are tender but still hold their shape, about 10 minutes.
  • Serve warm or at room temperature.

Tips:

  • Use a variety of dried apricots for a more complex flavor.
  • Soak the apricots in hot water for 15 minutes before cooking to plump them up.
  • Use a heavy saucepan to prevent the apricots from burning.
  • Cook the apricots over low heat until they are plump and glazed.
  • Add a pinch of salt to the yogurt to balance out the sweetness of the apricots.
  • Serve the apricots warm or cold, topped with yogurt and a sprinkle of cinnamon.

Conclusion:

Cognac-glazed dried apricots with cinnamon-spiced yogurt is a delicious and easy-to-make dessert. The apricots are plump and juicy, with a sweet and tangy flavor. The yogurt is creamy and smooth, with a hint of cinnamon. This dessert is perfect for a special occasion or a simple weeknight treat.
