1/2 cup unsalted butter
1/2 cup brown sugar
1/2 cup white sugar
3 tablespoons instant coffee
2 teaspoons vanilla extract
2 eggs
2/3 cup milk
1 3/4 cups flour
1/2 teaspoon salt
1 tablespoon baking powder
3/4 cup semi-sweet chocolate chips
1 1/2 cups coarsely chopped walnuts or 1 1/2 cups pecans

Steps:

  • Preheat oven to 350.
  • Grease and flour 12 muffin pan cups.
  • Cream the butter with the sugars, coffee and vanilla.

1/2 cup hot water
1/2 cup milk or 1/2 cup cream
1 beaten egg
1/2 cup oil

1/2 cup chopped walnuts or 1/2 cup chopped pecans

Steps:

  • Dissolve coffee in hot water and add milk or cream, beaten egg and oil.

2 c all-purpose flour
1 Tbsp baking powder
2 Tbsp espresso powder
1 tsp cinnamon
3/4 c sugar
1 c milk
1/3 c canola oil
2 tsp vanilla extract
3/4 c chopped walnuts
TOPPING
1/4 c finely chopped walnuts
2 Tbsp packed brown sugar

Steps:

  • 1. Preheat oven to 350 degrees. Lightly grease muffin tin or place 12 muffin cup liners in a muffin pan.
  • 2. Sift together the flour, baking powder, espresso powder, cinnamon in a large bowl and stir in the granulated sugar.

2/3 c milk
1 1/2 c walnuts, coarsely chopped
3/4 c semi-sweet chocolate chips

  • 1. Heat oven to 350°F Line twelve muffin cups with paper muffin cup liners.
  • 2. Beat butter, sugar, brown sugar, coffee and vanilla in large bowl until creamy. Stir together flour, baking powder and salt.
