2 sirloin steaks
2 Tbsp finely ground coffee
1/4 tsp cayenne pepper
1 Tbsp kosher salt
1 Tbsp brown sugar
1/2 tsp garlic powder
1/2 tsp black pepper

Steps:

  • 1. Mix coffee, cayenne, kosher salt, brown sugar, garlic powder, and black pepper.
  • 2. Rinse and pat dry the steak, trim well.
  • 3. Coat the steak with a moderate coating of the rub . Rub well
  • 4. Let the meat rest at room tempature for 15 minutes while grill is heating. Clean and oil grill.
  • 5. Place meat over high heat and flip every 5 - 6 minutes. Cook until internal temp of about 150 is reached, about 20 - 25 minutes depending on grill and thickness of the steak.
  • 6. Allow to rest for 10 minutes before serving.

1/4 cup ancho chili powder
1/4 cup finely ground espresso
2 tablespoons Spanish paprika
2 tablespoons dark brown sugar
1 tablespoon dry mustard
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon ground coriander
1 tablespoon dried oregano
2 teaspoons ground ginger
2 teaspoons chili de arbol powder
2 bone-in or boneless rib-eye steaks, 2-inches thick, approximately 1 1/2 pounds each
Canola or olive oil
Salt and coarsely ground black pepper
