Number Of Ingredients 10

3 or 4 ripe bananas, smashed
1/3 cup melted butter
3/4 cup sugar

1 Tbsp espresso or strong coffee (optional)
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour
1 cup chopped walnuts (toasted or raw)

Steps:

  • 1 Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. 2 Mix in the sugar, egg, espresso and vanilla. 3 Sprinkle the baking soda and salt over the mixture and mix in. 4 Add the flour, mix until it is just incorporated. Fold in the chopped walnuts. 5 Pour mixture into a prepared muffin tin. Bake for 25-30 minutes. Check for doneness with a toothpick inserted into the center of a muffin. If it comes out clean, it's done. Cool on a rack. Yield: Makes 12 muffins.

Tips:

  • Measure ingredients accurately: Using the correct amount of ingredients is essential for successful baking. Use measuring cups and spoons to ensure accurate measurements.
  • Use fresh, high-quality ingredients: The quality of your ingredients will directly impact the taste of your muffins. Use fresh coffee, nuts, and other ingredients for the best results.
  • Don't overmix the batter: Overmixing the batter can result in tough, dense muffins. Mix just until the ingredients are combined and no dry streaks remain.
  • Fill muffin cups evenly: Divide the batter evenly among the muffin cups to ensure that all muffins are the same size and bake evenly.
  • Bake muffins at the right temperature: The ideal baking temperature for coffee nut muffins is 375°F (190°C). This temperature will help the muffins rise properly and bake evenly.
  • Check for doneness: Insert a toothpick into the center of a muffin. If it comes out clean, the muffins are done. If it comes out with wet batter attached, the muffins need to bake for a few more minutes.
  • Let muffins cool before serving: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. This will help prevent the muffins from crumbling.
