STONEY RIVER - COFFEE CURED FILET

Stoney River - Coffee Cured Filet image

Just like the Coffee Cured Filet from Stoney River. Sounded weird when I first heard of it, but after tasting it, it tastes nothing like coffee and is an unbelievably flavorful steak. A staple in our household since perfecting the recipe!

Categories     Steak

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

4 beef tenderloin, filet
2 1/2 cups strong espresso or 2 1/2 cups darkest roast non-flavored coffee
1/4 cup olive oil
1/4 cup molasses (Regular Strength)
1 tablespoon brown sugar
1 1/2 tablespoons kosher salt (or Sea Salt)
1 teaspoon cumin
1/2 cup ice

Steps:

  • Place all the liquid and dry ingredients into a large bowl or zip-lock bag and mix until dissolved.
  • (HINT: Measure the olive oil first and then the molasses, it will slide right out of the measuring cup if you do the oil first).
  • Add ice to cool the mixture.
  • Add the filets and marinate at least 6 hours for best results. I like to mix them up and flip the meat every couple of hours, but not required.
  • When ready to cook the steaks, heat an iron skillet or griddle as hot as you can get it and sear the outside of the steaks for a minute or two until dark and crisp on the outside, then place on the grill to cook to your wellness liking the rest of the time.
  • (HINT: I recommend searing the steaks outside on a grill side burner if possible. It makes a mess of your cooktop inside otherwise.).

COFFEE MOLASSES MARINADE

Coffee Molasses Marinade image

Use this to marinate and baste chicken, spareribs or other cuts of pork. Marinate at least overnight. Prep time does not include marinating and cooling time.

Categories     < 15 Mins

Time 15m

Yield 2 1/4 cups

Number Of Ingredients 7

1 cup strong coffee
1/2 cup molasses
1/2 cup red wine vinegar
1/4 cup Dijon mustard
2 tablespoons Worcestershire sauce
2 garlic cloves, minced
1/4-1/2 teaspoon sambal oelek

Steps:

  • Combine all ingredients in a non-reactive saucepan.
  • Bring to a boil, stirring, and simmer 2 minutes.
  • Let cool before using.

Tips:

  • Choose the right cut of meat: For best results, use a tough cut of meat that will benefit from the tenderizing effects of the marinade. Good choices include flank steak, skirt steak, chuck roast, or pork shoulder.
  • Use a flavorful blend of spices: The marinade in this recipe is packed with flavor from a variety of spices, including chili powder, cumin, garlic powder, and smoked paprika. Feel free to adjust the spices to your own taste preferences.
  • Let the meat marinate for at least 4 hours: The longer the meat marinates, the more time the flavors will have to penetrate the meat and tenderize it. If you're short on time, you can marinate the meat for as little as 30 minutes, but the results won't be as good.
  • Cook the meat over medium-high heat: This will help to create a nice crust on the outside of the meat while keeping the inside tender and juicy.
  • Let the meat rest before slicing: This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful final product.

Conclusion:

This coffee molasses marinade is a delicious and easy way to add flavor and tenderness to your next grilled or roasted meat. With its blend of sweet, savory, and smoky flavors, this marinade is sure to become a new favorite. So next time you're looking for a new way to cook your meat, give this coffee molasses marinade a try. You won't be disappointed!
