My dad-a big steak lover-got this recipe form a friend, and now we never eat steak without using this marinade. It makes the meat so juicy and adds a great flavor.

2 tablespoons sesame seeds
6 tablespoons butter
1 medium onion, chopped
4 garlic cloves, minced
1 cup strong brewed coffee
1 cup soy sauce
2 tablespoons white vinegar
2 tablespoons Worcestershire sauce
2 pounds beef top sirloin steak (1 inch thick)

Steps:

  • In a small skillet, toast sesame seeds in butter. Add onion and garlic; saute until tender. In a large bowl, combine the coffee, soy sauce, vinegar, Worcestershire sauce and sesame seed mixture. , Pour half into a shallow dish; add steak and turn to coat. Cover and refrigerate for 8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain and discard marinade from steak. Grill steak, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Warm reserved marinade; serve with steak.

1 small shallot, chopped
2 garlic cloves, chopped
1 cup strong coffee, room temperature
1/4 cup balsamic vinegar
1/4 cup Dijon mustard
1/4 cup (packed) light brown sugar
2 tablespoons olive oil
1 teaspoon freshly ground black pepper plus more
1 1/2 pounds skirt steak, cut into 4 pieces
Kosher salt

Steps:

  • Whisk shallot, garlic, coffee, vinegar, mustard, brown sugar, oil, and 1 teaspoon pepper in a medium bowl. Pour half of marinade into a resealable plastic bag. Add steak, seal bag, and turn to coat. Let sit at room temperature 1 hour. Cover remaining marinade and set aside.
  • Prepare grill for medium-high heat. Remove steak from marinade; discard used marinade. Season steak with salt and pepper and grill, turning and basting often with reserved marinade, 8-10 minutes for medium-rare. Let rest 10 minutes before slicing.

1/4 cup dry white wine
1/3 cup olive oil
1/8 cup strong black coffee
3 roasted garlic cloves
1 shallot, peeled and minced

MESQUITE SPICE RUB
1/2 tsp kosher salt
1/2 tsp pepper
1/2 tsp chipotle chili powder
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp ground sage
1/8 tsp cayenne pepper
1/4 tsp ground mustard
1/4 tsp pimenton (smoked paprika)
WET INGREDIENTS
brewed coffee (black)
1 Tbsp white vinegar
1 8-12oz sirloin steak

Steps:

  • 1. If you have a Mesquite spice blend you know and love, (McCormick, Lawrys, etc...) Use that! This one is just one I particularly like :) Mix together spices until thoroughly combined. Then add the vinegar and enough brewed coffee to make a thickish mixture, Not too much that its all liquid, You'll know the right consistency
  • 2. Rub the mixture on the steak and allow to marinate for at least 4 hours. Overnight preferred
  • 3. Grill until desired internal done-ness and enjoy! (It goes really well with balsamic reduction, I promise!)
