1/3 cup sugar
4 teaspoons instant coffee granules
1-1/2 teaspoons ground cinnamon
BATTER:
3 tablespoons butter, softened
1/2 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup plain yogurt
2 tablespoons chopped walnuts or pecans

Steps:

  • Preheat oven to 350°. Mix sugar, coffee granules and cinnamon. In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Beat in egg and vanilla. In another bowl, whisk together flour, baking powder, baking soda and salt; add to butter mixture alternately with yogurt, beating just until blended. (Batter will be thick.), Spread half of the batter evenly into a 8-in. square baking pan coated with cooking spray; sprinkle with half of the coffee mixture. 2 teaspoons instant coffee granules
2 cups firmly-packed brown sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup butter, cut into pieces (cold)
2 tablespoons butter, cut into pieces (cold)
1 cup sour cream
1 teaspoon baking soda
1 large egg, slightly beaten
1/2 cup chopped walnuts or 1/2 cup pecans
1/2 cup mini chocolate chip

Steps:

  • Set oven to 350°.
  • Grease a 9-inch square baking dish.
  • In a large bowl, combine the flour, coffee granules, brown sugar, cinnamon and salt; mix well with a spoon to combine.

2 cups all-purpose flour
2 teaspoons instant coffee granules (heaped)
1 teaspoon cinnamon, ground
2 cups light brown sugar, firmly packed
1/2 teaspoon salt
1/2 cup butter, melted
1 (8 ounce) carton sour cream, beaten
1 teaspoon baking soda
1 large egg, beaten
3/4 cup walnuts or 3/4 cup pecans, chopped

Steps:

  • Combine flour, coffee granules, salt, baking soda, cinnamon and brown sugar in a large sized bowl.

But I was getting bored with the standard chocolate or cherry. And then I had an idea-mocha cheesecake! After lots of experiments, I came up with this recipe. 30 chocolate wafers, finely crushed (about 1-2/3 cups crumbs)
1/4 cup sugar
2 tablespoons butter, melted
2 tablespoons brewed espresso
FILLING:
8 ounces semisweet chocolate
2 tablespoons brewed espresso
3 packages (8 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
4 large eggs, room temperature, lightly beaten
2 cups frozen whipped topping, thawed
24 chocolate-covered coffee beans
Baking cocoa, optional
