¼ cup fresh orange juice
½ teaspoon fresh lemon juice
½ teaspoon prepared mustard
¼ teaspoon ground paprika
3 tablespoons unsalted butter
4 Cornish game hens
salt and pepper to taste
2 slices orange, halved
2 slices lemon, halved
1 cup seedless grapes

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). In a small saucepan, stir together the coffee liqueur, orange and lemon juices, mustard and paprika. Add butter and bring to a boil. Once boiling, lower heat and simmer for 1 minute. Remove from heat, cover and set aside.
  • Rinse hens under cold running water and pat dry. Season the cavities with salt and pepper to taste. Stuff each bird with half a slice of orange and half a slice of lemon. Stuff grapes into the cavity if desired. Spoon in about a tablespoon of the sauce. Truss or skewer the legs together and place breast side up in a shallow roasting pan, and tent loosely with foil.

I use 4 Tablespoons of freshly ground espresso beans to 6 oz. water and I usually have to make it in 2-3 batches because the basket in my machine won't hold enough of the grounds to make it all at once. I suggest adding the grounds first, then matching that amount with water.
  • Combine room temperature espresso with coffee liqueur and set aside.
  • To assemble tiramisu:.
  • Dip ladyfingers two at a time (one in each hand) into coffee mixture for one second on each side, then place immediately into pan. Continue until pan is covered in one layer of ladyfingers.
  • Spoon half of mascarpone cheese mixture onto ladyfingers in the pan, carefully spreading evenly to sides of pan.
  • Repeat with another layer of ladyfingers dipped in coffee mixture, then the remaining mascarpone cheese mixture, making sure to smooth top out evenly.
  • Put the unsweetened cocoa powder in to a fine sieve or strainer and tap gently over the tiramisu, covering it with a thin layer of cocoa powder.
  • Cover with plastic wrap and refrigerate for at least one hour, overnight is preferred.
  • Tip: use leftover coffee mixture to make delicious adult iced coffees in the blender. Just add lots of ice, cream and sugar, then sprinkle cinnamon on top!

1 (300 ml) ctn thickened cream
2 tablespoons powdered sugar icing
2 teaspoons vanilla bean paste
220 ml coffee liqueur (such as Kahlua)
1 1/4 liters freshly brewed espresso coffee, warmed
ground cinnamon, to serve

Steps:

  • Use an electric beater to beat the cream in a medium bowl until soft peaks form. Use a large metal spoon to fold in the icing sugar mixture and vanilla bean paste.
  • Pour the coffee liqueur evenly among serving glasses. Add the coffee and top with the cream mixture. Sprinkle with cinnamon and serve immediately.
  • Notes & tips.
  • The Spanish love their coffee sweet and strong - make yours special with a splash of Kahlua.
  • Prepare this recipe to the end of step 1 up to 1 day ahead. Cover and store in the fridge. Continue from step 2 just before serving.

2 fifths french brandy
4 cups superfine sugar
2 oranges, rinsed and dried
80 french roast coffee beans

Steps:

  • 1. Pour half the brandy into a large wide mouthed glass jar with a lid. Stir in sugar. Puncture the oranges with a can opener or skewer and insert a coffee bean into each hole. Put the oranges into the jar; stir well. Pour in remaining brandy. Cover and store in a cool dark place for 60 days, stirring occasionally. Before serving, remove and discard the oranges. The liqueur may be kept at room temperature up to 3 months. Refrigerate it for longer storage. Makes about 6 cups.Season's Greetings
