Kahlua, Toasted Coconut, and Ice-Cream Parfaits image

Categories     Dairy     Dessert     Freeze/Chill     Quick & Easy     Low Sodium     Coconut     Kahlúa     Summer     Gourmet

Yield Serves 2

Number Of Ingredients 3

1/4 cup lightly toasted sweetened flaked coconut
3 tablespoons Kahlúa or other coffee-flavored liqueur
3/4 pint premium vanilla ice cream, softened slightly

Steps:

  • Put 3 layers each coconut, liqueur, and ice cream in each of 2 wineglasses or parfait glasses, reserving about 1 tablespoon coconut and 2 teaspoons liqueur. Top parfaits with reserved coconut and liqueur and freeze, covered, 20 minutes.

Tips:

  • Use high-quality coffee: The flavor of your coffee ice cream will depend on the quality of the coffee you use. Choose a dark roast coffee with a strong flavor.
  • Make the coffee ice cream ahead of time: Coffee ice cream needs time to chill and firm up, so it's best to make it a day or two before you plan to serve it.
  • Use fresh cookies: Freshly baked cookies will give your parfaits the best flavor and texture. If you don't have time to bake cookies, you can use store-bought cookies.
  • Layer the parfaits carefully: Start with a layer of coffee ice cream, then add a layer of cookies, and repeat until you reach the top of the glass. Be sure to press down on each layer gently so that the parfaits are packed tightly.
  • Chill the parfaits before serving: Chill the parfaits for at least 30 minutes before serving so that they have time to set.

Conclusion:

Coffee ice cream and cookie parfaits are a delicious and easy dessert that can be enjoyed by people of all ages. With just a few simple ingredients, you can create a dessert that is both satisfying and refreshing. So next time you're looking for a sweet treat, give coffee ice cream and cookie parfaits a try!
