COFFEE-RUBBED RIB-EYE

Coffee-Rubbed Rib-Eye image

This is my beef suya (which means barbecue in Nigeria), and it's one of my favorite ways to prepare a rib-eye. It's bright. It's spicy. It's coffee. It has a nice onion flavor to it. It's everything you want in a steak, right there in the marinade.

Time 45m

Yield 4 servings

Number Of Ingredients 11

20 ounces rib-eye steak, bone-in
1 tablespoon dark-roast coffee, finely ground
2 tablespoons smoked paprika
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon salt
black pepper, 10 "cranks" of the mill
2 limes, zested
2 Thai chilies, stems removed, thinly sliced, may substitute serrano or bird chilies
1 cup grapeseed oil
3 tablespoons grapeseed oil

Steps:

  • For the marinade: In a bowl, combine coffee, smoked paprika, garlic powder, onion powder, salt, black pepper, lime zest, and sliced chili peppers. Stir; then whisk in 1 cup of oil. The marinade should be thick enough to coat the back of a spoon. Place the rib-eye in a baking dish and spread evenly with the marinade on both sides. Cover and marinate in the refrigerator for 3 hours.
  • Cook the steak: Preheat oven to 375 F. Heat a cast-iron skillet to smoking and add 3 tablespoons of grapeseed oil. Place the rib-eye into the pan to sear, about 2 minutes. When it's golden brown around the edges, place in the oven and cook approximately 12 minutes or until a thermometer registers between 138-145 F. After 7 minutes, flip the steak and cook another 5 minutes.
  • Remove steak from from the oven and allow meat to rest in the pan for 4 minutes to lock in juices. Slice against the grain and serve.

GRILLED COFFEE AND COLA SKIRT STEAK

Grilled Coffee and Cola Skirt Steak image

Two great drinks equals one fantastic marinade for skirt steak, the juiciest and most flavorful piece of meat you can put on a grill. It's smoky and subtly sweet. The flavors are balanced perfectly with the bitterness of the coffee in the grill marks. I really hope you'll give this a try.

Time 8h25m

Yield 4

Number Of Ingredients 12

2 large cloves garlic, minced
1 (12 fluid ounce) can or bottle cola-flavored carbonated beverage
½ cup freshly brewed strong coffee
¼ cup rice vinegar
2 tablespoons ketchup
1 ½ teaspoons freshly ground black pepper
1 teaspoon salt
1 teaspoon crushed dried rosemary
¼ teaspoon Louisiana-style hot sauce, or to taste
1 (1 1/4 pound) beef skirt steak - trimmed of large fat chunks
salt to taste
1 pinch cayenne pepper, or to taste

Steps:

  • Place garlic into a nonreactive bowl and whisk in cola, coffee, rice vinegar, ketchup, black pepper, 1 teaspoon salt, rosemary, and hot sauce until thoroughly combined.
  • Unroll the skirt steak and cut into 6-inch lengths with the grain, using a kitchen scissors. Submerge the meat totally in the marinade; place a piece of plastic wrap onto meat and marinade surface. Marinate 8 to 12 hours in refrigerator or overnight.
  • Preheat an outdoor grill for medium-high heat.
  • Remove meat from marinade; save the marinade. Pat meat thoroughly dry with paper towels. Season both sides of meat with salt and cayenne pepper to taste.
  • Pour marinade into a saucepan over medium heat and simmer until slightly thickened, about 10 minutes. Strain through a fine-mesh sieve into a bowl.
  • Grill meat on the preheated grill until steak pieces are still pink inside and meat has good grill marks, about 4 minutes per side. Place thin cooked pieces onto thicker pieces of meat to prevent thin ones from overcooking. When the surface of the meat looks shiny and wet from juices being forced up to the surface, the meat is medium-rare to medium in doneness. An instant-read meat thermometer inserted into the center of a piece should read 125 to 130 degrees F (52 to 54 degrees C).
  • Remove meat to a platter and let rest for at least 5 minutes before slicing thinly across the grain to serve. Drizzle servings with reduced coffee-cola marinade.

COFFEE MARINADE

Coffee Marinade image

The bitter undertones of coffee are an ideal complement to the smoky flavors of grilled beef. This marinade is particularly good with bone-in rib-eye and bone-in chuck steaks. From The Great Meat Cookbook by Bruce Aidells and Anne-Marie Ramo.

Categories     < 15 Mins

Time 5m

Yield 2 cups approximately

Number Of Ingredients 13

1 cup strong coffee, cooled
3 tablespoons balsamic vinegar
2 tablespoons minced white onions
2 tablespoons minced garlic
1 chipotle chile in adobo, finely chopped
2 teaspoons chopped fresh sage
1 teaspoon ground cumin
3 tablespoons soy sauce
2 teaspoons Worcestershire sauce
2 teaspoons dark brown sugar
2 teaspoons Tabasco sauce or 2 teaspoons hot sauce
2 teaspoons fresh ground black pepper
1/4 cup canola oil

Steps:

  • Pour the coffee into a small bowl and stir in the remaining ingredients.
  • Place the steaks of your choice in a large zipper-lock bag. Pour in the marinade, seal the bag, and turn to ensure the steaks are coated with the marinade. Marinate for 2 hours at room temperature or, better still, refrigerate overnight. (For a 2- to 3-inch-thick bone-in steak, it's best to marinate overnight.) Turn the bag from time to time to redistribute the marinade. Let the steaks sit at room temperature for 2 hours and pat dry before grilling.

Tips:

  • Choose the right coffee grounds: Darker roasts tend to impart a stronger flavor to the marinade, whereas lighter roasts may provide a more subtle flavor profile.
  • Use fresh coffee grounds: Freshly ground coffee beans will provide the most flavor to your marinade.
  • Grind the coffee grounds coarsely: Coarsely ground coffee grounds will help to prevent them from clumping together in the marinade.
  • Experiment with different types of coffee: Different types of coffee beans can impart different flavors to the marinade. Try experimenting with different beans, such as Arabica, Robusta, or a blend of the two, to find the flavor that you like best.
  • Add other spices and herbs to the marinade: Coffee grounds can be combined with other spices and herbs to create a flavorful and complex marinade. Some good options include garlic, onion, paprika, cumin, and chili powder.
  • Let the meat marinate for at least 30 minutes: The longer the meat marinates, the more flavor it will absorb. However, do not marinate the meat for longer than 24 hours, as this can make the meat tough.
  • Cook the meat over medium heat: Cooking the meat over medium heat will help to prevent it from drying out.
  • Serve the meat with your favorite sides: Coffee-marinated meat can be served with a variety of sides, such as roasted vegetables, mashed potatoes, or rice.

Conclusion:

Coffee grounds can be used to create a flavorful and tender marinade for a variety of meats. By following the tips above, you can create a delicious and memorable meal that your family and friends will love. So next time you're looking for a new way to marinate your meat, give coffee grounds a try!
