Steps:
- Make the tartar sauce:
- In a bowl stir together the mayonnaise, the parsley, the relish, the onion, the minced celery, the mustard, the lemon juice, the tarragon, the celery seeds, and the Tabasco until the sauce is combined well. (The tartar sauce may be made 1 day in advance and kept covered and chilled.)
- In a bowl stir together the cod, the eggs, the scallion, the parsley, the onion, the bread crumbs, 2 tablespoons of the tartar sauce, the Tabasco, and salt and pepper to taste, form heaping teaspoons of the mixture into balls, and roll the balls in the ground Saltines. In a large deep skillet heat 1 1/2 inches of the oil to 350°F and in it fry the cod balls in batches for 1 1/2 to 2 minutes on each side, or until they are golden. Transfer the fritters with a slotted spoon as they are fried to paper towels to drain. Serve the fritters warm with the remaining tartar sauce.
Tips:
- Use fresh cod: Fresh cod will give your fritters the best flavor and texture. If you can't find fresh cod, you can use frozen cod that has been thawed overnight in the refrigerator.
- Don't overmix the batter: Overmixing the batter will make the fritters tough. Mix the batter just until the ingredients are combined.
- Use a hot frying oil: The oil should be hot enough to sizzle when you drop the batter in. This will help the fritters cook evenly and prevent them from sticking to the pan.
- Don't overcrowd the pan: Don't overcrowd the pan with fritters. This will prevent them from cooking evenly.
- Serve with a dipping sauce: Cod fritters are delicious served with a variety of dipping sauces, such as tartar sauce, ketchup, or aioli.
Conclusion:
Cod fritters are a delicious and easy-to-make appetizer or main course. They are perfect for a weeknight meal or a special occasion. With a few simple ingredients and a little bit of time, you can create a dish that your family and friends will love.
