Yield 4 serving(s)

Number Of Ingredients 9

1 lb fish fillet (Fresh or Frozen)
2 tablespoons margarine or 2 tablespoons butter
1/4 cup lemon juice
1 tablespoon parsley, Chopped
1 teaspoon dill weed
1 teaspoon salt
1/4 teaspoon pepper
paprika
1 medium onion, Thinly Sliced

Steps:

  • On 4 large buttered squares of heavy-duty aluminum foil, place equal amounts of fish.
  • In small saucepan, melt margarine; add lemon juice, parsley, dill weed, salt and pepper.
  • Pour equal amounts over fish.
  • Sprinkle with paprika; top with onion slices.
  • Wrap foil securely around fish, leaving space for fish to expand.
  • Grill 5 to 7 minutes on each side or until fish flakes with fork.
  • Refrigerate leftovers.

Tips:

  • Choose the Right Fish: Select fresh and firm cod fillets with bright, clear eyes and a mild, briny smell.
  • Seasoning and Marinating: Enhance the flavor of your cod with a flavorful marinade or seasoning. Experiment with herbs like thyme, dill, or rosemary, and spices like paprika or garlic powder.
  • Foil Preparation: Use heavy-duty aluminum foil to create a sturdy packet for grilling. Fold the edges tightly to secure the fish and prevent leaks.
  • Cooking Time: The cooking time for cod in foil on the grill can vary depending on the thickness of the fillets. As a general guideline, aim for 10-12 minutes per inch of thickness.
  • Check for Doneness: To ensure that the cod is cooked thoroughly, insert a fork or toothpick into the thickest part of the fillet. It should flake easily when done.
  • Garnish and Serve: Before serving, garnish the grilled cod with fresh herbs, lemon wedges, or a squeeze of lemon juice to enhance its flavor.
