EASTER LAMB CAKE

Easter Lamb Cake image

My grandmother started the tradition of making this molded Easter lamb cake when I was little. We continue to make it every Easter. The memory is so special that I keep the lamb mold in my kitchen next to my cookbooks as a decoration. Make sure to grease and flour the mold really well so that the cake does not stick. - Debra Waggoner, Grand Island, Nebraska

Tips:

  • Use unsweetened coconut milk to make the yogurt. This will give you a yogurt that is naturally low in sugar and high in healthy fats.
  • Make sure to heat the coconut milk to 110-115 degrees Fahrenheit before adding the yogurt culture. This will help the culture to activate and grow.
  • Allow the yogurt to incubate for at least 6 hours, or up to 12 hours. The longer the yogurt incubates, the thicker and tangier it will become.
  • Strain the yogurt through a cheesecloth-lined colander to remove any excess liquid. This will give you a thicker, creamier yogurt.
  • Sweeten the yogurt with honey, maple syrup, or stevia to taste, if desired.
  • Add your favorite fruits, nuts, or granola to the yogurt for a delicious and healthy breakfast or snack.

Conclusion:

Coconut yogurt is a delicious, healthy, and versatile yogurt alternative that is easy to make at home. It is a great option for people who are lactose-intolerant or allergic to dairy, or for those who are simply looking for a healthier yogurt option. Coconut yogurt can be used in a variety of recipes, from smoothies to baked goods. It is also a great addition to breakfast cereal, oatmeal, or yogurt parfaits.
