1 1/2 cups sweetened shredded coconut
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 cup unsweetened coconut milk ((the kind in a can))
1/4 cup unsalted butter, (melted)
1 large egg
1 teaspoon coconut extract
1 teaspoon vanilla extract
1 cup unsweetened coconut flakes
1 1/2 cups powdered sugar
1/4 cup unsweetened coconut milk ((the kind in a can))
1 teaspoon coconut extract

Steps:

  • Preheat the oven to 375 degrees F and mist a loaf pan with non-stick spray.
  • Place the flour, coconut, sugar, baking powder, and salt in a medium bowl and stir to combine.

2 teaspoons coconut extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 cup sweetened shredded coconut
1 cup chopped walnuts

Steps:

  • In a large bowl, combine the sugar, oil, eggs and extract. Combine the flour, baking powder, baking soda and salt; add to sugar mixture alternately with buttermilk, stirring just until moistened.
