Categories     HarperCollins     Coconut     Pineapple     Brown Rice     Rice

Number Of Ingredients 14

1 1/2 cups uncooked long- grain brown rice, such as brown basmati
1 cup light coconut milk (about half a 15-ounce can), or more as needed
1 tablespoon safflower or other high-heat oil or 3 tablespoons vegetable broth or water
1 large onion, preferably red, chopped
2 cups small broccoli florets
1 medium red or green bell pepper, diced
2 medium carrots, peeled and sliced
2 medium ripe fresh tomatoes, diced
2 cups fresh pineapple chunks (about 3/4 inch thick) or one 20-ounce can unsweetened pineapple chunks in juice, drained (reserve liquid for another use)
1 to 2 teaspoons good-quality curry powder
2 teaspoons minced fresh or jarred ginger, or more to taste
Salt to taste
Crushed red pepper flakes to taste
Crushed peanuts or cashews for topping (optional)

Steps:

  • Combine the rice with 2 cups water and the coconut milk in a saucepan. Bring to a rapid simmer, then cover and simmer gently until the water is absorbed, about 30 to 35 minutes.
  • Meanwhile, heat the oil in a stir- fry pan or a wide skillet. Add the onion and saute over medium heat until golden.
  • Add the broccoli, bell pepper, and carrots. Turn the heat up to medium-high and stir-fry for 3 to 4 minutes, or until the vegetables are just tender-crisp.
  • Add the tomatoes and pineapple chunks and continue to stir-fry for a minute or two, just until the tomatoes soften slightly.
  • Stir in the cooked rice, curry powder, and ginger. Stir gently until all the ingredients are completely combined. Since about half the can of coconut milk is remaining, if you'd like the mixture to be a bit more moist, add 1/4 cup or so more, but take care not to make the mixture soupy.
  • Season with salt and red pepper flakes. Serve at once, passing around crushed nuts to top individual servings, if desired.

COCONUT CURRIED FRIED RICE WITH PINEAPPLE

Coconut Curried Fried Rice with Pineapple image

This curried fried rice is my very own creation. I'm the kind of person who cooks without measuring anything, so the measurements listed here are only estimates. I think that all the fun of cooking comes from substituting, experimenting, and adjusting to your own taste, so please have fun with this recipe! It has lots of great flavors and is sort of a combination of Malaysian, Thai, and Vietnamese.

PINEAPPLE COCONUT JASMINE RICE

Pineapple Coconut Jasmine Rice image

Ok....my sweet tooth hit overdrive tonight and I wanted my dinner to reflect that! I didn't want to wait for dessert for the good stuff....so here is a recipe that I found from President's Choice that definitely satisfied my need for sweet....but not overkill! This IS actually a dessert but I needed something to go with my Lemon Chicken and Fresh Snow Peas...so I decided that this would fill the empty spot on my plate. While I was waiting for my chicken to finish cooking, I was sampling this Jasmine Rice delight...and it was mighty hard to wait to put it on the plate! Hope you enjoy this as much as I did!

Time 35m

Yield 4 cups, 4-6 serving(s)

Number Of Ingredients 5

1 3/4 cups water
1 cup jasmine rice
14 ounces coconut milk
1/4 cup brown sugar (packed)
1/2 cup pineapple (diced)

Steps:

  • Bring water to a boil in a medium sized pot.
  • Stir in the rice and reduce heat to low.
  • Cover and cook for approximately 10 minutes or until water is absorbed (stirring occasionally),.
  • In a separate saucepan, heat the coconut milk over medium heat until hot but not boiling.
  • Add the brown sugar and stir until dissolved.
  • Add 1/2 of the coconut milk mixture to the cooked rice.
  • Let the rice stand for about 15-20 minutes.
  • Then add the diced pineapple and remainder of the coconut milk to the rice.
  • Optional: added a sprinkle of cinnamon to the top of the rice when serving.

Tips:

  • Use fresh ingredients for the best flavor. Fresh pineapple and coconut milk will give your rice a delicious tropical taste.
  • If you don't have fresh pineapple, you can use canned pineapple. Just be sure to drain it well.
  • You can use any type of rice you like for this recipe. However, jasmine rice or basmati rice are good choices because they have a light, fluffy texture.
  • Be sure to toast the rice before cooking it. This will help to bring out its flavor.
  • Use a heavy-bottomed pot to cook the rice. This will help to prevent the rice from burning.
  • Don't stir the rice while it's cooking. Stirring can make the rice gummy.
  • Let the rice rest for a few minutes before serving. This will help the rice to absorb all of the flavors.
  • Serve the rice with your favorite toppings. Some popular options include grilled chicken, shrimp, or vegetables.

Conclusion:

Coconut rice with pineapple is a delicious and easy-to-make dish that is perfect for any occasion. It's a great way to enjoy the flavors of the tropics. And the best part is that it's a one-pot meal, so cleanup is a breeze. So next time you're looking for a quick and easy meal, give coconut rice with pineapple a try.
