4 cloves garlic, minced
1 serrano pepper, seeded and minced
1 teaspoon ground cumin
1 teaspoon lime zest plus lime wedges, for garnish

1 1/2 cups wild rice

Steps:

  • Heat a medium saucepan with a lid over medium-high heat. Melt the coconut oil and add the scallion whites, garlic and serrano and cook, stirring frequently, until the garlic and scallions start to brown, 1 to 2 minutes. 1/2 cup unsweetened coconut flakes
1 tablespoon white or black sesame seeds
2 tablespoons coconut oil
1 scallion, thinly sliced, white and green parts separated
1 teaspoon ground turmeric
1/2 teaspoon black pepper, plus more as needed
1 (14-ounce) can full-fat coconut milk
Pinch of saffron (optional)
Kosher salt
1 medium bunch kale, spinach or Swiss chard
1 lime

Steps:

  • Rinse rice until water runs clear. Drain and set aside.

1/4 c. diced onion
2 c. long grain rice
1 14 oz can unsweetened coconut milk
1 c. water
1 1/2 tsp salt
1/4 tsp pepper
4 green onions
3 oz toasted slivered almonds to garnish
