GARLIC COCONUT MASHED YAMS (SWEET POTATOES)

Garlic Coconut Mashed Yams (Sweet Potatoes) image

This flavorful vegan side dish is ever-so-slightly adapted from a recipe in The Millennium Cookbook. These yams are truly addictive. They are a beautiful bed for a filet of fish, and a perfect complement to Caribbean-inspired dishes such as jerked meat or tempeh. I've even been known to eat the leftovers cold, straight from the refrigerator! This is a savory sweet potato dish, rather than the traditional sweet ones - It emphasizes the flavors of garlic and thyme.

COCONUT-BRAISED CHICKPEAS WITH SWEET POTATOES AND GREENS

Coconut-Braised Chickpeas with Sweet Potatoes and Greens image

This recipes picks up speed by calling for (slightly) wet greens. The water that clings to the leaves will help the greens cook; the fact that you don't have to haul out the salad spinner is a time-saving bonus.

Provided by David Tamarkin

Categories     cookbooks     Curry     Coconut

Yield 4 servings

Number Of Ingredients 14

½ cup slivered almonds
2 tablespoons coconut or vegetable oil
1 onion, thinly sliced
2 garlic cloves, finely chopped
1 tablespoon grated or finely chopped fresh ginger
1½ teaspoons curry powder
1 large bunch (about 8 ounces) greens, such as Swiss chard, kale, or collard greens, stems removed and leaves torn into medium-size pieces, washed, and shaken dry (there should be a little water still clinging to the leaves)
1 (15-ounce) can chickpeas, rinsed and drained
1 (13.5-ounce) can coconut milk
2 teaspoons kosher salt
4 Roasted Sweet Potato halves, cut into ½-inch pieces
1 tablespoon fresh lime juice, plus additional wedges for serving
½ cup chopped fresh cilantro leaves and tender stems, plus more for serving
Plain yogurt, for serving

Steps:

  • Toast the almonds in a small, dry skillet set over medium heat, tossing and stirring frequently until the almonds take on a golden color, 3 to 5 minutes. (Be vigilant-the almonds go from golden to burned like that.) Transfer the almonds to a plate and set aside to cool.
  • Warm a large Dutch oven over medium-high heat and add the oil. Add the onion and cook, stirring occasionally, until softened a little, about 5 minutes. Add the garlic, ginger, and curry powder and cook, stirring frequently, until it all gets really fragrant, 2 to 3 minutes more.
  • Add the greens to the pot and stir them into the onion mixture with a wooden spoon, scraping up any browned bits at the bottom of the pot while you do so. (If there are a lot of brown bits and they're sticking, add a teaspoon or two of water.) Add the chickpeas, coconut milk, 2 cups water, and the kosher salt. Let the whole thing simmer, partially covered, for about 10 minutes.
  • Add the sweet potatoes to the pot and cook for a minute or two-just enough to warm them through. Stir in the lime juice and cilantro and taste for seasoning; add more salt or lime juice if necessary.
  • Serve the braised chickpeas in shallow bowls drizzled with yogurt, topped with the almonds and a few cilantro leaves, and with lime wedges on the side.

GINATAAN (SWEET POTATOES IN COCONUT MILK)

Ginataan (Sweet Potatoes in Coconut Milk) image

Every Filipino I know loves Ginataan...a hot dessert of sweet potato and yam in sweetened coconut milk. We also add sliced Filipino Saba banana and little Mochiko balls (bilo bilo). Saba is a cooking banana similar to Plaintain, and can be found at Asian markets. Leave out the Saba if you can't locate it; do not use regular banana as it gets too mushy when cooked. Ginataan is Filipino comfort food at its finest!

Provided by May M

Categories     Dessert

Time 40m

Yield 5 serving(s)

Number Of Ingredients 7

1 1/2 lbs sweet potatoes (buy a mix of yellow-flesh sweet potatoes and orange-flesh "yams")
1 saba banana, sliced bite-sized (buy at Asian market)
2 cups water
1/3 cup mochiko sweet rice flour
2 tablespoons water (or as needed)
14 ounces coconut milk (do not use Cream of Coconut) or 14 ounces light coconut milk (do not use Cream of Coconut)
1/2 cup sugar

Steps:

  • Wash and peel sweet potatoes and cut into 1-1/2 inch pieces. Keep cut potatoes under water in a prep bowl while you are preparing so they don't discolor.
  • Drain potatoes and transfer to a large saucepan. Add the sliced Saba. Pour in 2 cups water and bring to boil over medium-high heat. Cook until the potatoes are fork-tender.
  • While potatoes and Saba are cooking, make the bilo bilo: In a small bowl, mix together the Mochiko flour and 2 tablespoons of water. Add more water as needed to make a dough that is not too sticky, not too dry. Roll into marble-size balls and set aside.
  • When potatoes are done, lower the heat to medium and gently drop the balls in the simmering water. They are fully cooked when they float to the top.
  • When the last ball floats, gently stir in the coconut milk and sugar to the mixture. Stir carefully so you don't break up the potatoes. Simmer for 5 minutes, then ladle into bowls and serve warm.
  • Store leftovers in fridge; reheat before serving.

CURRIED SWEET POTATOES IN COCONUT MILK

Curried Sweet Potatoes in Coconut Milk image

I found this recipe on a site that was promoting an Asian-flavored Thanksgiving. Even though we don't really celebrate the holiday per se, we adore sweet potatoes and we love Indian cuisine, so why limit ourselves? The original recipe called for yams, but I subbed in the sweet potatoes. Feel free to re-sub the yams. I also adapted the recipe a bit to tailor it more to our family's tastes.

Categories     Yam/Sweet Potato

Time 40m

Yield 4 serving(s)

Number Of Ingredients 18

1 lb sweet potato
1 tablespoon salt
1 onion, peeled
2 inches fresh gingerroot
1 garlic clove
2 -3 tablespoons vegetable oil
1 teaspoon cumin seed (don't even think of substituting ground cumin, it's not going to work, read the directions, you'll s)
2 whole green cardamom pods (if you can get them)
1 bay leaf
4 peppercorns
1 inch cinnamon stick
1/2 teaspoon cayenne pepper
1 teaspoon ground coriander
1/2 teaspoon garam masala (optional, but again, don't leave it out)
salt, to taste
1/2 cup coconut milk
1/2 cup water
1 tablespoon chopped coriander

Steps:

  • Peel the sweet potatoes and cut them into 1 inch cubes.
  • Place the cubes in a colander and sprinkle liberally with salt.
  • Let stand 10-15 minutes.
  • Steam the potatoes for 10 minutes, until just barely soft. (I do this in the microwave for about 5 minutes).
  • Meanwhile, finely chop the onion, ginger and garlic.
  • Heat the cooking pan over a moderate flame, add the cumin seed, and cook until they begin to splutter.
  • Add the chopped onion, ginger, and garlic.
  • Cook until the onion is a rich golden color.
  • Add all the spices and season with salt to taste.
  • Let this cook while you continue with the sweet potatoes (yes, there's more to do with them).
  • Heat the oil and sauté the already steamed sweet potato cubes until golden brown.
  • Drain on absorbent paper towels. (I skip this step, just more calories.).
  • Pour the coconut milk and water into the pot and bring to a healthy simmer. Let it boil, roil and bubble for a few minutes, then add the yam cubes and onion spice mixture, reduce heat, and simmer, covered, for about 10 minutes or until nearly dry, but still moist.
  • When it's done, transfer to a serving platter. Pick out the bits you don't want (like the bay leaf). I leave in the cinnamon stick, my kids like to fight over it, and I like to watch.
  • Serve hot, garnished with the chopped coriander sprinkled on top.

COCONUT WHIPPED SWEET POTATOES WITH MAPLE-PECAN DRIZZLE

Coconut Whipped Sweet Potatoes with Maple-Pecan Drizzle image

Sweet potatoes simmered in coconut milk until tender, whipped until smooth, and topped with a warm maple syrup and pecan mixture. Dairy-free and delicious!

Provided by Kare for Kitchen Treaty

Time 25m

Number Of Ingredients 10

3 pounds sweet potatoes (peeled and cut into approx. 3/4-inch cubes)
1 14-ounce can coconut milk*
2 tablespoons pure maple syrup
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1/8 teaspoon cayenne pepper
1/16 teaspoon a generous pinch ground cloves
1/2 teaspoon kosher salt (plus more to taste)
1/3 cup chopped raw pecans
1/3 cup pure maple syrup

Steps:

  • Place a large pot over medium heat. Add the sweet potatoes, coconut milk, 2 tablespoons maple syrup, cinnamon, nutmeg, cayenne, cloves, and 1/2 teaspoon kosher salt to the pot. Stir to combine.
  • Bring to a simmer, then reduce heat to low. Cover and simmer, stirring occasionally, until the potatoes are tender, about 15 minutes.
  • Remove pot from heat and remove lid. Let cool until a bit safer to handle - I give it about 5 minutes.
  • While the potatoes are cooling a bit, make the maple-pecan drizzle. Place the pecans and 1/3 cup maple syrup in a small saucepan and set over low heat. Cook, stirring frequently, until warm and bubbling, a couple of minutes (depending on your stove top). Remove from heat.
  • Using a hand mixer, whip the potatoes, starting on low speed and then gradually increasing to high speed to help decrease splatter. Be careful! Note that if you have a non-stick pan, you may want to transfer the potatoes to a bowl first so you don't risk getting any teflon in your potatoes. Teflon potatoes bad!
  • Taste the potatoes and add more salt if desired. Scoop into a serving bowl and spoon the warm maple-pecan drizzle over the top. Serve.

COCONUT-FREE IRISH POTATOES CANDY

Coconut-Free Irish Potatoes Candy image

I was frantically searching for a non-coconut recipe for Irish Potatoes for St. Patrick's day. I recently became allergic to coconut, so I made this recipe up after not being able to find an alternative online or in any cookbooks I have at home. I think the almonds are a nice twist and help maintain the consistency of the ball instead of just omitting coconut from other recipes I've seen. This is a good no-bake recipe. It is simple to make and easy to eat.

Provided by TIFFASMITH

Time 50m

Yield 72

Number Of Ingredients 6

2 cups whole almonds
½ cup ground cinnamon, or more to taste
½ (8 ounce) package cream cheese, softened
¼ cup unsalted butter, softened
1 teaspoon vanilla extract
1 (16 ounce) package confectioners' sugar

Steps:

  • Place almonds in the bowl of a food processor; process until finely ground. Pour cinnamon into a rimmed plate.
  • Mix cream cheese, butter, and vanilla extract in a large bowl until evenly blended. Place the bowl into a large pan filled with ice to help mixture stiffen; make sure butter mixture does not spill out of the bowl.
  • Sift confectioners' sugar into the butter mixture. Add ground almonds and stir until combined. Let mixture rest on ice for 5 minutes.
  • Roll mixture into 1/2-inch balls and roll in cinnamon until coated. Refrigerate until set, about 20 minutes.

SCALLOPED POTATOES WITH COCONUT MILK AND CHILIES

Scalloped Potatoes With Coconut Milk and Chilies image

An Indian-inspired version of the French classic, layered with eye-opening flavors (yes, it hurts so good), this is a great side dish with any of the meat offerings in this book. I love to serve it for Sunday brunch, as a piquant alternative to hash browns.

Categories     Potato     Brunch     Side     Bake     Vegetarian     Casserole/Gratin     Coconut     Hot Pepper

Yield Serves 6

Number Of Ingredients 7

1 can (13.5 ounces) unsweetened coconut milk
2 tablespoons Balchao Masala
1 1/2 teaspoons coarse kosher or sea salt
Vegetable cooking spray
1 pound russet or Yukon Gold potatoes, peeled, cut crosswise or lengthwise (depending on their size) into 1/4-inch-thick slices, and submerged in a bowl of cold water to prevent browning
4 scallions (green tops and white bulbs), thinly sliced crosswise
8 to 10 medium-size to large fresh curry leaves

Steps:

  • Preheat the oven to 350°F.
  • Whisk the coconut milk, masala, and salt together in a small bowl.
  • Lightly spray a casserole dish with cooking spray. Drain the potatoes. Cover the bottom of the casserole with a layer of potatoes, and sprinkle a third of the scallions over them. Stir the sauce (the masala tends to sink to the bottom, so a good stir helps to mix everything evenly) and drizzle a third of it over the layer. Repeat the layers of potatoes, scallions, and masala two more times, using up all the ingredients
  • Spread the curry leaves over the top layer. Cover the dish and bake until the potatoes are fork-tender, about 45 minutes.
  • Remove the cover and continue to bake until the potatoes are browned, 10 to 15 minutes. Then serve.

SLOW COOKER POTATOES AND CARROTS IN COCONUT CURRY

Slow Cooker Potatoes and Carrots in Coconut Curry image

This is a typical southern Indian dish where coconut cream (or coconut milk) is a common ingredient. This dish can be served hot, warm or at room temperature like a traditional potato salad. Recipe is from my Gourmet Vegetarian slow Cooker Cookbook.

Number Of Ingredients 13

3 lb red potatoes
1 c water
2 Tbsp vegetable oil
1 onion, finely chopped
2 garlic cloves, coarsely chopped
2 Tbsp cumin seeds
2 tsp fennel seeds
1 lb carrots, sliced into rounds
2 Tbsp curry powder
1 can(s) 14-oz. can coconut cream (or coconut milk)
salt to taste
4 serrano chilies, seeded, deveined and cut into julienne for garnish (or jalapenos if you want less heat)
1/4 c fresh cilantro leaves, for garnish

Steps:

  • 1. Wash the potatoes thoroughly, then place into the slow cooker insert and add the water. Cover and cook on low for 4-5 hours, or until the potatoes are fairly tender (cooking time will depend upon the size and type of potato you use). Tiny red potatoes, for instance, will generally cook in less than 4 hours, so use a fork to determine doneness. If your potatoes are fairly large, you may wish to cut them into quarters.
  • 2. In a saute pan, heat the oil and saute the onion over medium-high heat until golden brown, about 10 minutes. Add the garlic, cumin seeds, and fennel seeds and continue cooking for another 2-3 minutes. Add the onion, carrots and curry powder to the potatoes and carefully stir in the coconut cream. Re-cover and continue cooking for 1 hour.
  • 3. Add salt to taste, then spoon the curry into a bowl or onto plates and garnish with the chile slices and cilantro.

Tips:

  • Choose the right potatoes: Yukon Gold or russet potatoes are best for this recipe as they hold their shape well and have a creamy texture.
  • Cut the potatoes evenly: This will ensure that they cook evenly.
  • Soak the potatoes in water: This will help to remove excess starch and prevent the potatoes from sticking together.
  • Use a large skillet: This will give the potatoes plenty of room to brown.
  • Don't overcrowd the skillet: Cook the potatoes in batches if necessary.
  • Season the potatoes well: Salt, pepper, and garlic powder are a good starting point.
  • Cook the potatoes until they are golden brown and crispy: This will take about 10-12 minutes per side.
  • Serve the potatoes immediately: They are best when they are hot and crispy.

Conclusion:

Coconut potatoes are a delicious and versatile side dish that can be served with a variety of meals. They are easy to make and can be tailored to your own taste preferences. Whether you like them spicy, sweet, or savory, there is a coconut potato recipe out there for you. So next time you are looking for a new side dish to try, give coconut potatoes a try.
